AbstrakSaat ini minat terhadap bahan pangan dengan kandungan antioksidan terus meningkat, khususnya kandungan antioksidan alami yang terdapat pada pangan lokal Indonesia. Oleh sebab itu, telah dilakukan penelitian dengan tujuan menjelaskan beberapa jenis senyawa antioksidan alami yang umum ditemukan dalam bahan pangan, menjelaskan beberapa metode ekstraksi dan pengolahan bahan pangan, serta mengumpulkan berbagai data mengenai pangan lokal Indonesia yang dapat menjadi alternatif sumber antioksidan alami. Metode penelitian yang digunakan yaitu metode studi pustaka dengan menganalisis data melalui jurnal dan referensi yang sudah ada sebelumnya dari tahun 1994 sampai dengan 2016. Dari penelitian ini didapatkan bahwa senyawa antioksidan pada bahan pangan umumnya ditemukan dalam bentuk Vitamin C, Vitamin E, beta-karoten, selenium, superoksida dismutase (SOD), dan flavonoid. Beberapa pangan lokal yang dapat menjadi alternatif sumber antioksidan alami ditemukan pada sayur-sayuran, buah-buahan, rempah-rempah, serta produk hewani yang mudah ditemukan di sekitar masyarakat. Metode ekstraksi yang umum digunakan untuk mengidentifikasi senyawa antioksidan yaitu ekstraksi dengan pelarut dan ekstraksi mekanis.Kata kunci: flavonoid, ekstraksi, pangan lokal, enzim, radikal bebas. Telah dilakukan penelitian tentang pengaruh jenis material kemasan vakum dan non-vakum terhadap kualitas kadar air, dan organoleptik bakso aci pada penyimpanan suhu dingin. Tujuan Penelitian ini untuk mengetahui pengaruh kemasan bakso aci dengan penggunaan plastik Polietilen (PE) dan plastik nilon yang dikemas melalui teknik pengemasan vakum dan non-vakum pada penyimpanan suhu dingin. Serta untuk mendapatkan jenis kemasan yang tepat dalam penggunaannya terhadap kualitas bakso aci. Pengujian yang dilakukan meliputi uji kadar air dan uji organoleptik. Metode analisa statistik yang digunakan berupa Rancangan Acak Lengkap (RAL) untuk mendapatkan hasil yang lebih baik dan tidak terjadi kesalahan yang signifikan. Penelitian yang dilakukan menggunakan RAL dengan 4 perlakuan dan 2 kali pengulangan. Pengolahan data yang dilakukan dengan software SPSS (Statistical Product and Service Solutions) menggunakan metode ANOVA ( Analysis of Variance) dan uji lanjut Duncan untuk Uji kadar air dan menggunakan Kruskall Walls dan uji lanjut dengan Mann- Whitney untuk uji organoleptik terhadap kenampakan, aroma dan tekstur. Pengujian organoleptik mengikuti standar SNI untuk Bakso dengan 10 orang panelis tak terlatih. Berdasarkan penelitian yang dilakukan didapatkan hasil bahwa kadar air terendah yaitu dengan penggunaan kemasan polietilen (PE) teknik pengemasan Vakum dengan nilai 2,35. Hasil untuk pengujian Organoleptik, yang dapat disimpulkan dari segi kenampakan, aroma dan tekstur perlakuan yang terbaik adalah dengan penggunaan jenis kemasan polietilen, dengan teknik pengemasan vakum dan jenis kemasan nilon dengan teknik pengemasan vakum yang mampu meyimpan dengan baik hingga hari ke-8. Research has been carried out on the effect of vacuum and non-vacuum packaging materials on the quality of water content and organoleptic properties of tapioca meatballs in cold storage. The purpose of this study was to determine the effect of meatball tapioca packaging with the use of polyethylene (PE) plastic and Nilon plastic packaged through vacuum and non-vacuum packaging in cold storage. As well as to get the right type of packaging in its use on the quality of tapioca meatballs. The tests carried out included water content tests and organoleptic tests. The statistical analysis method used was a completely randomized design (CRD) to get better results and there were no significant errors. The study was conducted using RAL with 4 treatments and 2 treatments. Data processing was carried out using SPSS (Statistical Product and Service Solutions) software using the ANOVA (Analysis of Variance) method and Duncan's further test for moisture content testing and using Kruskall Walls and further testing with Mann-Whitney for organoleptic tests on appearance, aroma and texture. The organoleptic followed the SNI standard for Meatballs with 10 panelists not being tested. Based on the research conducted, it was found that the lowest water content was the use of polyethylene (PE) packaging with a vacuum packaging technique with a value of 2.35. The results for organoleptic testing, which can be guaranteed in terms of appearance, smell and treatment are the best by using polyethylene packaging, with packaging techniques and Nilon packaging types with vacuum packaging techniques which are able to store well until the 8th day.
Tuna fillets are considered good media for the growth of microorganisms because it contains a high protein level. In order to determine the rottenness of the tuna fillet, smart packaging is needed. Research has been carried out on making smart labels based on red cabbage extract as an indicator of the freshness of tuna fillets at chiller temperatures. The purpose of this research was to find the best pH variation of red cabbage extract for use as a tuna fillet indicator label. The indicator labels were made with variations in pH 2, 5, 8, and 11. The tests conducted in this research including mean RGB labels, pH tests, and organoleptic tuna fillets. This research used a Completely Randomized Design (CRD) method which consists of two repetitions for each test. The test was carried out for 8 days and tested every 2 days. From this research, it was found that the pH 2 label was the best pH variation to monitor the freshness of tuna fillets. The color change of the label occurred on the 4th day when the mean RGB label pH 2 was 168.802 ± 1.093 and the pH of the tuna filet was 6.11 ± 0.16. The organoleptic score had exceeded the sensory limit on day 4 of all parameters with the appearance, smell, and texture scores being 3.8 ± 1.0, respectively; 4.6 ± 0.8; 4.8 ± 1.4. The pH 2 label was chosen since there was a color change from pink to purple when detecting spoilage in tuna fillets.
