Neste trabalho, estudou-se a influência do tipo de centrífuga utilizado no processamento do mel de abelha sobre os parâmetros reológicos, físico-químicos e sensoriais. Para a análise sensorial, trabalhou-se com 58 provadores que constataram mudanças no sabor das amostras. Na análise reológica, foi utilizado um reômetro RS50 conectado a um banho termostático K20-DC5, ambos da HAAKE, com um sensor de geometria cone-placa. Ocorreram diferenças significativas nos valores da viscosidade entre as duas amostras obtidas por meio dos respectivos modelos de centrífugas. O valor da viscosidade do mel obtido da centrífuga radial foi, aproximadamente, o dobro do valor do mel processado na centrífuga facial. Nenhuma alteração foi observada nos níveis de hidroximetilfurfural e umidade de ambas as amostras. No caso do mel obtido da centrífuga radial, obteve-se umidade de 20,6%, enquanto o mel processado na centrífuga facial apresentou umidade de 20,2%. Na análise sensorial, cerca de 69% dos provadores manifestaram preferência pelo mel processado na centrífuga radial, que consideraram o sabor doce menos acentuado e mais viscoso.
Improving the coverage of water supply and sanitation has positive impacts on economic, social and health conditions. In brazil, the deficit in water supply and sanitation in urban areas has been reduced due to recent government investments, but are still insufficient for the service universalization. Deficiencies in water supply and sanitation are observerd in rural areas of brazil because, historically, these areas have not received sufficient investment. This paper presents the alternatives adopted in rural communities in brazil, with at least 2500 inhabitants, being those successful experiences that can be replicated. Research stages involved literature surveys, interviews with experts and with community representatives, and field trips. The interviews and field trips allowed the knowledge of local realities, of appropriate technical solutions, the uptake and levels of community awareness, the operational problems and the management systems frequently applied.
A grande quantidade de gases de efeito estufa (GEE) emitida por ação antropogênica torna-se um desafio que requer iniciativas para a sua mitigação, como parcerias público-privadas. Nos países em desenvolvimento, essa questão é ainda mais problemática, pois o crescente desenvolvimento econômico não é acompanhado por legislação e iniciativas que regulam o metano liberado na atmosfera. Este trabalho tem como objetivo medir a redução de GEE, aplicando uma metodologia de projeto Clean Development Mechanism (CDM) da Organização das Nações Unidas (ONU) a um aterro real. Os métodos utilizados foram um estudo de caso de um aterro sanitário no estado do Rio de Janeiro, Brasil, com aplicação do modelo LandGem da United States Environmental Protection Agency (EPA) para o dimensionamento dos gases produzidos e, finalmente, análise de projetos CDM para definir uma metodologia que se aplica ao caso. Os resultados mostram que, com a simples implementação de flares no aterro, há uma grande redução das emissões de metano, mas ainda é necessário maior interesse do poder público e privado pela aplicação de metodologias de mitigação de gases. A principal limitação desta pesquisa é o fato de haver poucas publicações na área de metodologias de projetos CDM, e que os dados usados para dimensionar os gases no modelo LandGem foram estimados através de previsões de população e resíduos. Por fim, este estudo pode ser amplamente aplicado em aterros sanitários de diferentes localidades, não restritos ao Brasil.
