ABSTRACT O cupuí (Theobroma subincanum Mart.) é uma espécie silvestre nativa da Amazônia, pertence à família Malvaceae e é encontrada em florestas de terra firme. Embora tenha menor importância econômica que Theobroma cacao (cacau) e Theobroma grandiflorum (cupuaçu), o fruto é apreciado pela população local. O objetivo deste estudo foi avaliar a composição físico-química e centesimal de frutos do cupuí procedentes da Ilha do Marajó, estado do Pará, Brasil. Foram analisadas as características físicas do fruto, peso, comprimento, diâmetro, rendimento e cor. Além disso, foi analisada a composição físico-química da polpa em termos de pH, acidez total titulável, sólidos solúveis totais, atividade de água, vitamina C, cálcio e fósforo. Para análise centesimal, foram analisadas a umidade (em base úmida), cinzas, proteína bruta total, lipídeo total, açúcares redutores e valor energético total. Os frutos apresentaram peso médio de 186,45 ± 19,95 g, comprimento 10,11 ± 1,11 cm e diâmetro 6,28 ± 0,52 cm. O rendimento de polpa para as amostras analisadas foi de aproximadamente 10% da massa total, sendo 60,69% correspondente as cascas e 27,05% as sementes. A coloração média dos frutos foi identificada como levemente amarela. As amostras apresentaram pH médio de 3,72 ± 0,04 e acidez total titulável de 5,37 ± 0,12 g de ácido cítrico/100 g de parte comestível (PC). A polpa apresentou um teor de sólidos solúveis totais de 14,73 ± 0,50 °Brix. A atividade de água foi de 0,94 ± 0 e vitamina C de 19,05 ± 2,56 mg de ácido ascórbico por 100 g de PC. Não foram encontrados valores significativos para cálcio e fósforo. Quanto à caracterização centesimal, foram encontrados teores de cinzas de 1,3%, a umidade em base úmida foi de 85,4% ± 0,12. O teor de proteína bruta total e lipídeo total foram de 1,04% ± 0,32 e 1,20% ± 0,09, respectivamente. A polpa apresentou teor de açúcares redutores de 16,32 ± 0,26 g em 100 g/PC e valor energético total de 80,24 ± 33,54 Kcal/100 g de PC. Os valores encontrados na caracterização físico-química e centesimal são semelhantes aos encontrados para outras espécies do gênero Theobroma. Desta forma, este estudo mostrou-se importante a fim de impulsionar o desenvolvimento de novas pesquisas e produtos que utilizem essa matriz vegetal.Palavras-Chave: Fruta amazônica.
