Resumo O acuri é uma fruta pouco explorada industrialmente, mas com grandes perspectivas e possibilidades de uso. Para tanto, torna-se necessário reduzir o seu teor de água, aumentando então a sua vida útil, o que possibilitará sua utilização em mercados distantes dos locais de produção. Nesse sentido, objetivou-se secar fatias de acuri, com espessura de aproximadamente 4,07 mm, nas temperaturas de 60, 70, 80 e 90 °C, ajustar diferentes modelos matemáticos aos dados experimentais e determinar os coeficientes de difusão, a energia de ativação e as propriedades termodinâmicas. Observou-se que o aumento de temperatura de 30°C reduziu em 36% o tempo total de processo, sendo obtidas taxas de secagem máximas de 1,22; 1,88; 2,16, e 2,45 kg de água kg de matéria seca min-1 nas temperaturas de 60, 70, 80 e 90 °C, respectivamente. Dentre os modelos matemáticos testados, o modelo logarítmico apresentou os melhores parâmetros de ajustes aos dados experimentais e foi selecionado como o mais adequado para representar o fenômeno investigado. Os coeficientes de difusão efetivos aumentaram com o incremento de temperatura, apresentando-se na ordem de 10-10 m2 s-1 , e sua dependência com a temperatura foi descrita pela Equação de Arrhenius, que apresentou energia de ativação de 17,66 kJ mol-1 . Os valores de entalpia e entropia reduziram com a elevação da temperatura de secagem, enquanto que a energia livre de Gibbs foi ampliada na faixa de temperatura avaliada.
Citron watermelon is an agricultural product of excellent economic potential. Its seeds are widely used for oil extraction, serving as an energy source, showing nutritional characteristics that make them a suitable product to be studied. Thus, the objective was to characterize citron watermelon seeds regarding their physicochemical composition, in addition to determining drying kinetics, fitting mathematical models to the data, and determining the effective diffusivity coefficients and thermodynamic properties. The seeds were dried in a convective dryer, varying the drying temperature, with air velocity of 1.0 m s-1. With the increase in drying temperature, there were reductions in moisture content, water activity (aw), ash concentration, total titratable acidity, lipids and reducing sugar. Citron watermelon seeds are rich in lipids and ash, have low sugar concentration and low acidity; their drying kinetics was very well described by the Two Terms and Approximation of Diffusion models, followed by the models of Midilli and Page, which resulted in acceptable fits. Effective diffusivity accompanied the increase in drying temperature, and this behavior was well fitted by an Arrhenius-type equation. Enthalpy and entropy variations were reduced with drying temperature, with increments in Gibbs free energy.
Resumo: A utilização de sementes germinadas na elaboração de produtos alimentícios com boa qualidade nutricional é uma possibilidade e o sorgo pode se apresentar como alternativa ao consumo dos cereais convencionais. O objetivo deste estudo foi de observar as alterações nos parâmetros físico-químicos da semente de sorgo antes e após o processo de germinação, assim como avaliar as propriedades funcionais indicando suas possíveis utilizações como ingrediente alimentar. As sementes germinadas apresentaram um aumento no teor proteico, passando de 4,32 para 7,20%, além da diminuição no teor de amido e consequente aumento no teor de açúcares redutores. A partir das propriedades funcionais avaliadas, a semente de sorgo germinada apresentou uma boa capacidade de absorção de óleo, podendo ser utilizado como ingrediente para auxiliar na textura e suculência de produtos. A germinação garantiu boa capacidade de formação de espuma e sua estabilidade, podendo ser utilizado como ingrediente em produtos alimentícios de fermentação, como bolos e biscoitos, além de bom agente de formação de gel podendo ser útil em sistemas alimentícios como pudim e lanches, que requerem espessamento e gelificação. Abstract:The use of germinated seeds in the preparation of food products with good nutritional quality is a possibility and sorghum can be presented as an alternative to the consumption of conventional cereals. The objective of this study was to observe the changes in physical and chemical parameters of sorghum seed before and after the germination process, and assess the functional properties indicating their possible use as a food ingredient. Germinated seeds showed an increase in protein content, from 4.32 to 7.20% in addition to the decrease in the starch content and the consequent increase in reducing sugars. From the functional properties evaluated, the germinated sorghum seeds showed a good ability to absorb oil and can be used as an ingredient to aid in texture and juiciness products. Germination ensured good foaming ability and stability, can be used as an ingredient in food products of fermentation, such as cakes and cookies, and good gelling agent may be useful in food systems such as pudding and snacks, which require thickening and gelation.
O Brasil é o segundo maior produtor de abacaxi do mundo. A polpa é a parte do fruto que é normalmente consumida, enquanto a porção mais consistente do eixo central e a casca são consideradas resíduos do seu processamento, não sendo devidamente aproveitadas pelas indústrias. Objetivou-se com este trabalho desidratar a casca do abacaxi, na forma de placas com comprimento de 15 cm e largura de 8 cm, em estufa com circulação forçada de ar nas temperaturas de 75 e 85 °C, e ajustando-os a modelos matemáticos. Como critério de avaliação do ajuste dos modelos matemáticos utilizou-se o coeficiente de determinação, o desvio quadrático médio e distribuição aleatória dos resíduos. A casca do abacaxi com teor de água inicial de 87,73% (b.u) apresentou teor de água final de 10,67% (b.u) na temperatura de 75 °C e 9,05% para a de 85 °C, havendo uma redução média de 88,76% (b.u) do material em estudo. Verificou-se que as amostras submetidas à desidratação na temperatura 75 °C demandaram maior intervalo de tempo para atingir o teor de água de equilíbrio em comparação com as amostras desidratadas na temperatura de 85 °C. Entre os modelos estudados, observou--se que os de Page, Aproximação da Difusão e Midilli apresentaram os maiores coeficientes de determinação (R² > 0,998) e os menores desvios quadráticos médios (DQM < 0,02), entretanto, o modelo de Page foi o único com distribuição aleatória dos resíduos em todas as temperaturas estudadas, resultando no melhor ajuste aos dados experimentais da secagem da casca do abacaxi.
The objective of this work was to perform the chemical and physical characterization of the kino bark (Cucumis metuliferus) as well as to evaluate through mathematical modeling the drying kinetics at different temperatures. The barks were characterized in natura for water content, total and soluble solids, water activity, ashes, pH, total titratable acidity, Ratio and ascorbic acid. The drying kinetics at 60, 70, 80 and 90 °C were determined by adjusting the data to twelve mathematical models using the coefficient of determination (R2) and the mean square deviation (DQM) as adjustment criteria. The kino barks showed high water content and water activity, with relatively low acidity and ash parameters and satisfactory contents of ascorbic acid, total and soluble solids. Ten of the models tested presented satisfactory adjustments to the drying kinetics data, highlighting the Page and Diffusion Approximation models, with R²> 0.999 and DQM <0.091.
The objective of the present study was to characterize physically the grapefruit peel (Citrus paradisi Macf.) and to model the drying of the dehydrated samples at 60, 70, 80 and 90 ºC, evaluating the model adjustments and the drying rates, in their respective temperatures. In natura barks were characterized by water content, total and soluble solids, water activity, ash, pH, total titratable acidity, Ratio and ascorbic acid. The drying kinetics were performed in an air circulation oven, adjusting eleven mathematical models, considering as fit quality criterion, the determination coefficients (R2) and the mean square deviations (DQM). Grapefruit peels showed high water content and water activity, low acidity and ashes. Ten of the models presented satisfactory adjustments to the drying kinetics, highlighting Page, Logarithmic, Diffusion Approximation and Midilli, with R2> 0.99 and DQM <0.03; the 50% increase in drying temperature resulted in a reduction of the process time by approximately 50%.
A carambola (Averrhoa carambola L.) é tida como uma das frutas de grande potencial, por ser fonte de compostos essenciais para a nutrição dos seres humanos. A grande parte das perdas pós-colheita de frutas deve-se ao despreparo das pessoas do ramo da agroindústria e consumidores. A secagem é o processo comercial mais utilizado para preservar e aumentar a vida útil do produto alimentício convertendo-os em produtos mais estáveis. Diante disso, o objetivo desse trabalho foi de obter curvas de secagem de carambola em um secador convectivo e, a partir dessas curvas, obter dados de taxa de secagem. As carambolas foram lavadas, higienizadas, minimamente processadas em fatias de 1 cm de espessura e colocadas imediatamente nas bandejas para secagem. Utilizou-se um secador convectivo para o experimento, nas temperaturas de 60, 70 e 80 °C e velocidade do ar de secagem de 1,5 m s-1. As pesagens foram realizadas até que as variações de massa fossem insignificantes e, em seguida, as amostras foram colocadas em estufa, a uma temperatura de 105 ºC por 24 h, para determinação da matéria seca. Para o ajuste matemático das curvas de secagem dos resíduos foram utilizadas as equações de Henderson, Lewis e Page ajustadas com o auxílio do programa computacional Statistica, versão 5.0. O melhor ajuste deu-se ao modelo de Page, seguido de Lewis e Henderson, apresentando os melhores R2. A large part of post-harvest fruit losses due to the unpreparedness of the people's branch of the agro-industry and consumers. Drying is the most widely used commercial process to preserve and extend the life of the food product by converting them into more stable products. Thus, the aim was to get carambola (star fruit) drying curves in a convective dryer and from these curves, get drying rate data. The cannons were washed, sanitized, minimally processed into 1 cm thick slices and placed immediately in the trays for drying. We used a convection dryer for the experiment at temperatures of 60, 70 and 80 °C, and drying air velocity of 1.5 m s-1. The weighings were carried out until the mass variations were insignificant, and then the samples were placed in a greenhouse at a temperature of 105 °C for 24 h to determine dry matter. For mathematical adjustment of waste drying curves were used the equations of Henderson, Lewis and Page set with the help of the software Statistica, version 5.0. The best fit was given to the Page model, followed by Lewis and Henderson, presenting the best R2.
