The objective of the study was to evaluate fattening performance, carcass value and meat quality in pigs of Prestice Black-Pied breed in relation to slaughter weight (SW) and gender (barrows and gilts, resp.). Pigs were divided into weight categories: SW1 (75 to 99.9 kg), SW2 (100 to 109.9 kg) and SW3 (110 to 130 kg) and all individual traits were analyzed by the general linear model procedure (SAS 9.3). Average SW of each weight group was as follows: SW1 94.2 kg, SW2 105.8 kg, and SW3 115.2 kg. Differences among average backfat thickness of 36.07 mm in SW1, 40.16 mm in SW2, and 43.21 mm in SW3 were significant (p<0.01). Lean meat content was 48.94% (SW1), 48.78% (SW2), and 48.76% (SW3). Pigs were slaughtered at average weight of 105.7 kg for barrows and 104.4 kg for gilts. Average backfat thickness for barrows was 40.90 mm and 38.72 mm for gilts (significant difference p<0.05). Lean meat content was 48.75% in barrows and 48.91% in gilts. The values of pH45, characterizing the meat of very good quality. The loin in SW3 was darker than the muscles of SW1 and SW2. Drip loss was the lowest in SW1 (1.96%), compared to the highest drip loss in SW3 (2.59%). Content of intramuscular fat was 2.68% in SW3, 2.79% in SW2, and SW1 had the lowest content 2.47%. The values of pH45, colour lightness and drip loss were similar in both genders. However barrows had higher intramuscular fat content by 0.31% than gilts (p<0.05).
The aim of this study was to prove the hypothesis that the growth and health of calves are dependent on feed supplements with an antidiarrhoeic effect, in relation to sex, season of birth, and number of the dam's lactations. A total of 186 calves were included in the experiment. After birth the calves were divided into three treatment groups: Ascophyllum nodosum (brown seaweed hydrolyzate, prebiotics), Lactobacillus sporogenes (probiotics), and the control group. All calves were weighed within two h after birth. The growth and health were investigated from the birth to the fourth week of age. Compared to the control, a significant effect of applied feed supplements was found in the Lactobacillus sporogenes group in the body weight at 28 days of life (P < 0.01) and in the average daily gains (P < 0.001). Differences between sexes were found in the body weight at birth (P < 0.001) and in the body weight at 28 days of life (P < 0.01). The effect of the season of birth was recorded in the average daily gains (P < 0.01). The effect of the number of the dam's lactations on calf was proved in body weights at birth and 28 days of life (P < 0.01). The interaction between treatment and sex (P < 0.05), and between treatment and season of birth (P < 0.01) were calculated in the average daily gains. We concluded from the analysis that only the use of Lactobacillus sporogenes had a positive influence on increasing the growth. Neither of the two supplements had a positive impact on the health of calves.
the aim of our study was to evaluate influence of probiotic agents (Lactovita) and seaweed extracts (Biopolym) with antidiarrheal effects on the prevention of diarrhoea in calves. In the experiment 22 experimental and 22 control calves were observed. The results of the observed incidence of diarrhoea in the control and experimental groups showed a positive effect of probiotic Lactovita and seaweed extracts Biopolymer. 32% of calves in the experimental group and 45% of calves in the control group became sick. Unfortunately, we could not demonstrate the statistical significance of these differences. The weight gains found in the 4th week after birth were by 37.6% higher in the group with Lactovita and Biopolym than in the control group.
The utilization of plant by-products as functional food ingredients has received increasing attention in the last decade. One such by-product generated during milk thistle oil pressing is oilseed cakes, which could be used as a novel food ingredient. Therefore, the study aimed at investigating the effects of the addition of milk thistle oilseed cake (MTOC) flour fractions obtained via dry sieving, differing in particle size (unsieved; coarse: >710 µm; medium: 315–710 µm; and fine: <315 µm), on the quality of gluten-free bread and stability of silymarin during breadmaking. The 10% addition of the fractions into gluten-free bread increased the protein, fibre, fat, ash and silymarin content. The breads with the coarse fraction had the highest content of fibre, whereas the breads with the fine fraction excelled in protein, fat and ash content. The medium fraction was characterized as the richest source of silymarin, whilst the fine fraction was the poorest. Silymarin constituents were slightly released during dough rising but also partially decomposed during baking; moreover, silydianin was the most susceptible and degraded the most. The enriched breads had better sensory and textural properties compared to the control bread. The results suggest that MTOC flour fractions can improve the potential health benefits and nutritional profile of gluten-free bread.
