Brazil is a country with great biodiversity; however, knowledge of this microbiological wealth is currently insufficient for its utilization in a sustainable manner. Agricultural expansion represents one of the largest current dangers to biodiversity and threatens to cause the extinction of a variety of species. This study therefore aimed to isolate and identify the species of fungi present in coffee beans cultivated in organic and conventional systems. Eighteen (18) samples of coffee beans from southern Minas Gerais were analyzed, and 346 fungal isolates were obtained from the analyzed coffee beans. RESUMOUm dos problemas mais sérios que confrontam a qualidade do arroz é a presença de fungos produtores de micotoxinas, principalmente as espécies pertencentes aos gêneros Aspergillus, Penicillium e Fusarium. Neste estudo, objetivou-se verificar os níveis de aflatoxinas e identificar a população fúngica associada a grãos de arroz beneficiado e comercializado em Belo Horizonte e algumas cidades do sul do estado. Foram analisadas um total de 60 amostras de arroz: orgânico, parboilizado, integral, polido, sendo a incidência de aflatoxinas verificada em uma amostra. Os resultados demonstraram que as espécies aflatoxigênicas identificadas foram A. parasiticus e A. flavus. Utilizando Cromatografia Líquida de Alta Eficiência para avaliar a incidência de aflatoxina em arroz, apenas uma apresentou contaminação de 1,2 ìg Kg -1 . Apesar da presença de fungos aflatoxigênicos, as amostras não apresentaram níveis preocupantes de aflatoxinas que pudessem colocar em risco a segurança do produto e a saúde dos consumidores. ABSTRACTOne of the most serious problems facing the quality of rice is the presence of mycotoxin-producing fungi, especially the species belonging to the genera Aspergillus, Penicillium and Fusarium. The objective of this study was to check the levels of aflatoxins and identify the fungal population associated with grains of rice received and sold in Belo Horizonte and some cities in the southern state. We analyzed a total of 60 samples of rice: organic, parboiled, full, polished, and the incidence of aflatoxins found in a sample. The results showed that the aflatoxigenic species identified were A. parasiticus and G2 and A. flavus. Using high performance liquid chromatography to assess the incidence of aflatoxin in rice, only one showed a contamination of 1.2 ìg kg-1. Despite the presence of aflatoxigenic fungi, the samples showed no worrying levels of aflatoxin that could endanger the safety of the product and consumer health.
Diversos fatores podem interferir na qualidade do café, especialmente aqueles relacionados às etapas pós-colheita de processamento e secagem. Algumas espécies de fungos podem se associar a grãos de café durante a pós-colheita, podendo ocasionar alterações indesejáveis. O objetivo deste estudo foi avaliar a influência dos processamentos via seca (natural), seco em terreiro de terra, e via úmida (despolpado), seco em terreiro de cimento, tradicionalmente empregados na região sudoeste da Bahia, na incidência de fungos em grãos de café beneficiados produzidos na safra 2007/2008. O experimento consistiu de 4 tratamentos: a) café natural de Barra do Choça; b) café natural de Encruzilhada; c) café despolpado de Barra do Choça e d) café despolpado de Encruzilhada; e 5 repetições. Foram coletadas 20 amostras de grãos de café oriundas de diferentes propriedades cafeeiras nestes municípios. Os resultados obtidos foram avaliados pelo teste de médias t de Bonferroni a 5% de probabilidade. Houve diferença estatística significativa entre os tratamentos analisados para a infestação fúngica. Os gêneros detectados foram: Aspergillus, Penicillium e Fusarium, sendo que o gênero Aspergillus foi o de maior incidência, no qual foram identificadas oito espécies: Aspergillus ochraceus, A. niger, A. flavus, A. foetidus, A. tubingensis, A. auricomus, A. sojae e A. oryzae. Foi detectada a maior incidência de fungos em grãos de café oriundos de processamento natural do que de processamento despolpado.
