El proyecto se estructuró en cuatro etapas, siendo el objetivo general de la investigación: desarrollar, gestionar e implementar un modelo para lograr empresas sustentables económica-social y ambientalmente, a través del diagnóstico, análisis de la problemática, generación de programas de solución e implementación, dirigido a las MIPyMES de quesos y dulces de leche (jamoncillo) en la región Altos Norte. La duración del proyecto fue de dos años, la primera etapa tuvo- como objetivo “Gestionar y adecuar el modelo de innovación para lograr empresas competitivas de bajo impacto ambiental”. Se recabó información de los aspectos económicos y administrativos de las MIPyMES de lácteos de la región en estudio, en los tres niveles de gobierno. Se revisaron las normas en organismos federales y estatales, SSA, STPS, SEMARNAT, SEMADET, SE y SHCP. Se consideró la clasificación de las empresas de acuerdo a los criterios de la Secretaria de Economía. Se elaboraron los instrumentos para la gestión del modelo de innovación tecnológica (incluyendo la presentación, concientización y capacitación inicial) para las empresas de estudio. En la segunda etapa, se realizó el diagnóstico integral de las empresas, el análisis de la problemática bajo un enfoque sistémico; considerando todas las áreas y procesos. En la tercera etapa se desarrollaron y adecuaron los programas considerando los posibles cambios tecnológicos y de infraestructura, priorizando las mejoras organizacionales y administrativas que no representaban inversión económica fuerte. Finalmente, en la cuarta etapa se realizó la implementación y evaluación de resultados en dos empresas durante cuatro meses abarcando todas las áreas estratégicas en cada tipo de empresa y considerando el contexto regional y nacional para las empresas. Se estructuró un modelo sistémico que al implementarse en MIPyMES de dulces de leche y quesos puede modificar su competitividad y la sustentabilidad.
