Foi realizada também a análise microbiológica do peixe in natura; a matéria-prima estava dentro dos limites exigidos pela legislação brasileira, portanto apta para o processamento e/ou consumo. AbstractThe fillet yield of Thai-style tilapia and its physicochemical composition, including moisture content, protein, ash lipids and water activity, were determined. The analysis involved 19 specimens of tilapia with average weight and length of 989.6 g and 38.9 cm, respectively. The fish were weighed, measured (length, width and thickness), filleted, and the yield was calculated. The chemical composition presented the following contents: 77.13% moisture, 2.60% lipids, 19.30% protein, 1.09% ash, and 0.983 water activity. The fillet/fish to fish/residue weight ratios presented good linear correlations. The raw fish was also subjected to a microbiological analysis, which indicated that it met the safety limits established by Brazilian legislation and was therefore safe for processing and consumption. Frutas tropicais como a manga (Mangifera indica L.) uma das mais populares do mundo, embora muito apreciadas, são altamente perecíveis e requer técnicas especiais para sua conservação e comercialização, razão por que se objetivou otimizar seu processo de secagem osmótica e estudar o efeito da temperatura, concentração de sacarose e tempo de imersão, em relação à perda de água e ganho de sólidos. A influência de cada variável e sua interação sobre as respostas, foram avaliada através da análise de variância (teste F e coeficiente de determinação). Verificou-se que os três fatores mostraram efeito significativo quanto à perda de água e ganho de sólidos de manga, dentro das faixas estudadas. A condição ótima encontrada para desidratação utilizada como pré-tratamento para maior perda de água e menor ganho de sólidos, foi temperatura de 50 ºC, concentração de 40% e tempo de imersão de 90 min.
A ginja (Eugenia uniflora L.) apresenta compostos fenólicos com ação antioxidante, ação hipoglicemiante e antirreumática, utilizada em distúrbios estomacais e como anti-hipertensivos. O leite de búfala exibe excelente qualidade nutricional destacando-se como principais características o elevado teor de proteínas com 25,55%, tendo mais aminoácidos essenciais que o leite de vaca. O objetivo deste estudo foi elaborar um iogurte grego de leite de búfala com calda de ginja e avaliar a influência da adição de diferentes percentuais de calda (10, 20 e 30% p/p) sobre o teor de ácido ascórbico e antocianinas no produto elaborado. Os frutos foram coletados no município de Salvaterra e levados para o laboratório onde foram sanitizados e despolpados para utilização no iogurte. Os iogurtes foram elaborados com leite bubalino, açúcar e leite em pó integral. Os frutos de ginja, o leite de búfala e o iogurte elaborado foram avaliados quanto as suas características físico-químicas, microbiológicas e sensoriais. Os frutos apresentaram uma ótima relação sólidos totais tituláveis (SST)/acidez total titulável (ATT) e apresentaram teores de ácido ascórbico e antocianinas elevados (124,08 mg/100g e 179,27 m Eqg Cianidina-3-glicosideo/100g respectivamente). O leite de búfala utilizado apresentou características físico-químicas de acordo com os padrões microbiológicos exigidos por lei. O aumento do percentual de calda de ginja no iogurte grego de búfala elevou significativamente os teores de ácido ascórbico e antocianinas no produto, demonstrando a possibilidade da produção de novos produtos com características nutricionais agregadas para inserção em novos mercados. O produto também apresentou da boa aceitação sensorial, sendo que as formulações com 10%, 20% e 30% de calda apresentaram percentuais de 87%, 89% e 89% de aceitação pelos provadores respectivamente.
The aim of this work was to perform the microbiological and physicochemical characterization of surimi made from waste of piramutaba filleting. The results of physicochemical characterization of the waste and surimi were: moisture (76.37 and 79.11%), total lipids (5.35 and 0.74%), proteins (14.92 and 10.79%), ash (3.03 and 2.35%), pH (6.9 and 7.4), caloric value (109.15 and 77.86 kcal.g-1), and water activity (both 0.98), respectively. The results of the levels of total volatile bases were 7.29 mgN/100-1 g (waste) and 7.01% carbohydrate (surimi). The values of total lipids and proteins were reduced during the preparation of surimi, probably due to successive washes during the processing. Waste and surimi were examined microbiologically and are in compliance with required parameters. The results show a loss of red (a* parameter) and yellow (b* parameter) color. On the other hand, the L* parameter (lightness) increased after the processing of surimi. It can be concluded that piramutaba waste can be used for surimi preparation and as a source of nutrients for human consumption, providing an alternative use of these wastes avoiding their disposal polluting the environment.
