Se plantea un sistema de riego automático para cultivos de ahuyama en el departamento de Sucre, Colombia. El sistema diseñado se compone de un controlador proporcional, integral y derivativo (PID) sintonizado y un sistema de adquisición de datos conectado a la nube mediante herramientas del Internet de las Cosas. El usuario controla el cultivo de manera remota y gestiona la información histórica y en tiempo real para evaluar el requerimiento hídrico del cultivo de variables atmosféricas y suelo. Los valores referenciales obtenidos de las diferencias entre la humedad deseada en el cultivo y la humedad medida en tiempo real en el suelo y el microclima del cultivo fueron inferiores al 2%. El sistema demostró ser eficiente, estable y optimiza el error en estado estacionario, lo que contribuye para la implementación en campo a bajo costo y resultando en un aporte importante para la región.
ResumenEl objetivo del presente estudio fue analizar las curvas de gelatinización de almidones nativos, extraídos de las especies de ñame Criollo, Espino y Diamante 22. Metodológicamente, se utilizó un reómetro y un analizador rápido de almidón. Se concluye que la temperatura inicial de gelatinización fue mayor para las especies Criollo y Diamante 22. La mayor viscosidad se obtuvo en la especie Espino. Las especies Criollo y Diamante 22 presentaron mayor estabilidad y menor tendencia a la retro-degradación potencializando su uso en alimentos que requieran mantener un gel de consistencia estable a procesos de cocción y en productos que necesiten enfriamiento durante su preparación. Esto sugiere su posible uso en formulaciones de alimentos que requieran el rápido desarrollo de la viscosidad y un gel de consistencia estable. AbstractThe objective of the present study was to analyze the gelatinization curves of native starches extracted from the Criollo, Espino and Diamante 22 yam species. Methodologically, a rheometer and a rapid starch analyzer were used. It was found that the initial gelatinization temperature was higher for the Criollo and Diamante 22 species. The highest viscosity was obtained in the Hawthorn species. Finally, the Criollo and Diamante 22 species presented greater stability and less tendency to retro degradation favoring their use in foods that require to maintain a gel of stable consistency to cooking processes and in products that need cooling during their preparation. This suggests their possible use in food formulations that require fast development of viscosity and a gel of stable consistency.
Se determinó la influencia de la temperatura y tiempo de freído por inmersión sobre las características de textura de la ahuyama (un zapallo o calabaza tropical). Metodológicamente, se determinaron las condiciones proximales iniciales de la ahuyama. Luego, se realizó un proceso de freído por inmersión empleando temperaturas de 130 °C, 150 °C y 170 °C y tiempos de freído de 40 s, 80 s, 120 s y 160 s. Finalmente, se realizó un análisis de perfil de textura para las características de dureza, adhesividad, cohesividad, elasticidad, y masticabilidad del producto obtenido. Se concluye, que el incremento de la temperatura y el tiempo de proceso disminuyen la dureza y la adhesividad. Finalmente, para la masticabilidad las temperaturas de proceso empleadas permiten obtener productos que requerirán igual energía para ser desintegrados e ingeridos por el consumidor.
El objetivo del presente estudio fue modelar el microclima en un cultivo de sandía (Citrullus lanatus) en el departamento de Sucre en Colombia. Se realizó un estudio de simulación como alternativa de control automático para sistemas de riego. Metodológicamente, se utilizaron los modelos de Penman-Monteith y de balance hídrico para analizar el requerimiento hídrico del cultivo. Como estrategia de control se utilizaron controladores de tipo PID y difuso para comparar su comportamiento y establecer la mejor opción frente a las dificultades de recurso hídrico del cultivo bajo las condiciones climáticas de la sabana del departamento de Sucre. Se concluye que, en el modelamiento aplicado el controlador PID arrojó mejor rendimiento (aproximadamente de 3,3 veces) frente al controlador difuso en términos de un ciclo de trabajo de 24 horas. Además, con el controlador PID también se obtuvieron mejores resultados en términos de consumo energético, cantidad de líquido y estabilidad del sistema, frente al controlador difuso.
In the present study, the relationships between the application of a diffuse tool applied to irrigation systems in watermelon crops are explored, as well as modeling and simulation as a tool applied to the same crop. Both tools were worked through Matlab® software, control cards with sensors and meteorological stations, where the data related to the climatic conditions of the Study Region were taken and measured. It is concluded that the simulated and applied system is economically viable as an alternative for the increase of production in small, medium and large farmers of Watermelon, in the Sabanas Region of the Department of Sucre. In addition, the system is technically stable from the point of view of Control Theory with an error ratio of less than 1.5%, demonstrating good levels of liquid optimization and energy consumption.
