A babosa branca (Cordia superba) é um fruto encontrado no Brasil e possui formato arredondado, e quando o fruto se encontra maduro, apresenta coloração branca, sabor adocicado e aspecto gelatinoso. Este trabalho teve como o objetivo avaliar as alterações de coloração, firmeza e taxa respiratória da babosa branca cultivada em Lavras, Minas Gerais, Brasil, durante a maturação dos frutos verde, intermediário e maduros, a fim de conhecer melhor a mudança destes parâmetros no processo de amadurecimento. Os frutos foram colhidos e separados em três estágios diferentes, de acordo com a cor da superfície. Posteriormente os frutos foram submetidos às análises de cor, firmeza e avaliação da taxa respiratória. Com o avanço dos estágios de maturação, foi possível observar a degradação da clorofila à antoxantina. Também foram observadas a redução da firmeza e a redução da taxa respiratória com o passar do tempo. Assim, observou-se que devido a essas mudanças, os frutos da babosa branca são considerados frutos não-climatéricos.
Minimally processed vegetable products are defined as ready-toeat or ready-to-use foods in culinary preparations that have undergone one or a few basic procedures, such as washing, sanitization, elimination of nonedible portions such as peels and seeds, and cutting (Graca et al., 2020;Monteiro et al., 2016;Padrón-Mederos et al., 2020). Visando aumentar a aplicação de embalagens sustentáveis e de antioxidantes naturais obtidos de plantas, este trabalho teve por objetivo produzir um filme biodegradável com fécula de mandioca e extratos de alecrim e sálvia e avaliar a sua influência na estabilidade oxidativa da manteiga. Utilizou-se o Delineamento Composto Central Rotacional (DCCR) com três variáveis independentes: concentração de alecrim, concentração de sálvia e tempo de armazenamento. As manteigas foram caracterizadas, embaladas com filmes de fécula de mandioca com diferentes concentrações dos extratos e armazenadas a 5 e 15 °C durante 30 dias e avaliadas quanto ao índice de peróxidos, acidez titulável e compostos fenólicos. Nas manteigas armazenadas a 5 °C, apenas o tempo de armazenamento influenciou no índice de peróxido e a relação entre o alecrim e sálvia na acidez titulável. Já nas manteigas armazenadas a 15 °C, o tempo de armazenamento e as concentrações dos extratos influenciaram no índice de peróxidos e na acidez. Conclui-se que, nas concentrações médias de extrato de alecrim e sálvia utilizadas (4 mL 100 mL-1 de solução filmogênica), os valores encontrados no índice de peróxidos foram menores. O uso dos extratos apresentou influência sobre a estabilidade oxidativa do produto indicando possibilidade no desenvolvimento e aplicação do filme biodegradável.

Abstract
Effect of biodegradable film with of rosemary and sage extracts on oxidative stability of stick butter
In order to increase the application of sustainable packaging and natural antioxidants obtained from plants, this work aimed to produce a biodegradable film with cassava starch and extracts of rosemary and sage and to evaluate its influence on the oxidative stability of butter. The Central Composite Rotational Design (CCRD) was used with three independent variables: rosemary concentration, sage concentration and storage time. The butters were characterized, packed with cassava starch films with different concentrations of the extracts and stored at 5 and 15 C for 30 days and evaluated for peroxide index, titratable acidity and phenolic compounds. In the butters stored at 5 C, only the storage time influenced the peroxide index and the relationship between rosemary and sage in the titratable acidity. In the case of butters stored at 15 C, the days and concentrations of the extracts influenced the peroxide index and acidity. It was concluded that in the average concentrations of rosemary and sage extract used (4 mL 100 mL-1 of filmogenic solution), the values found in the peroxide index were lower. Therefore, the use of extracts had an influence on the oxidative stability of the product, indicating the possibility of the development and application of the biodegradable film.
