Atualmente, a alimentação vem sendo caracterizada pela maior utilização de produtos de fácil aquisição, preparo e consumo, ou seja, pelos alimentos processados e ultraprocessados. Esses alimentos possuem substâncias adicionadas, denominadas aditivos alimentares, os quais são utilizados pelas indústrias alimentícias, com fins de uso tecnológico ou sensorial. O objetivo deste estudo foi realizar uma revisão bibliográfica sobre aditivos alimentares, aspectos tecnológicos e seus impactos na saúde humana. Foi realizada a busca em quatro bases de dados a saber: Portal de Periódicos da Capes, SciELO (Scientific Eletronic Library Online), Google Acadêmico, com publicações nacionais e internacionais e Biblioteca Setorial da Universidade Federal de Santa Maria Campus Palmeira das Missões, no período de 2003 a 2016, com os descritores: “aditivos químicos”, “aditivos alimentares”, “aditivos e riscos à saúde”, “aditivos e neoplasias” e “uso de aditivos e doenças”. Observou-se que, quando utilizados em demasia, os aditivos alimentares podem causar danos à saúde do consumidor, com o desenvolvimento de doenças e/ou outras complicações. Dessa forma, as indústrias devem estar atentas quanto ao uso dessas substâncias nos alimentos, respeitando os valores estabelecidos pela legislação brasileira. Além disso, deve haver um maior controle a nível laboratorial por parte de instituições credenciadas para análise dessas substâncias nos alimentos.
