In order to explore the contributions of origin products (OPs) to rural development, this chapter first conceptualizes both origin products (OPs) and rural development, and then analyses how different actors involved in OP systems mobilize these resources within their strategies. The examples of EU protected designations of origin (PDOs) and protected geographical indications (PGIs) highlight different categories of positive effects that OP product valorization can have on rural development, as well as some ambiguous effects.

Ces repères, qui sont à la base de plusieurs modes de coordination, sont des conditions qui permettent au marché de fonctionner. L'hypothèse que la "qualité" soit définie de manière endogène et relève de processus de construction différenciés, conduit à analyser les différents régimes de coordination liés à la qualité, le passage éventuel d'un régime à l'autre et le rôle des institutions de certification dans ces évolutions. L'objet de cet article est de mener cette analyse, en prenant pour champ d'application le secteur de ce qu'il est convenu d'appeller l'agriculture biologique. [eng] The "convention theory" agrees with the idea that the market mechanisms are not sufficient for explaining economic coordination and states the assumption that actors use conventional indicators for defining goods quality. These indicators lay as basis of several coordination models which make the market to work. These models have to be analysed, as well as the transition process from one model to another and the role of the institutions in this process. The aim of this article is to deal with such questions by making a case analysis in the field of the organic farming, which seems to be highly exemplary.
This chapter explains why and how, in a context of stronger competition for generic products in globalized markets, some European farmers and artisan processing enterprises have built 'strategic alliances' to coordinate the production and sales of origin food products. The first section of the chapter discusses the importance of collective organization in the European vision of protected designations of origin (PDOs) and protected geographical indications (PGIs), and why operators in countries/regions may be eager or reluctant to adopt this approach. The second section highlights the reasons that may lead producers and small artisan processors to join a collective organization. The third section is dedicated to the most common organizational models implemented with success in Europe. Finally, the last section of the chapter describes the construction process of the collective organization and emphasizes the difficulties of scaling up the organization without losing the vision, strategic objectives and values of the initiators.
[eng] In this article we wish to show, according to different economical approaches, that normalization creates contradictorial and situated tendencies in the frame of the economical globalization. One actor may hesitate to adopt standards since their building and their adoption modify their duties and their justifications. Thus, conditions of competition between firms and between « normalization areas » may be changed. In this way, the main point becomes the socio-eco- nomical process itself of the standards building. The article is based on several examples in the agricultural and food sector. [fre] Cet article montre que la normalisation met en jeu des dynamiques contradictoires et situées, selon différentes approches économiques, dans le cadre général de la globalisation des économies. Elles peuvent rendre difficile à résoudre le problème de l'opportunité de son adoption par l'acteur. La construction de normes et son adoption ne vont pas de soi et font évoluer les formes de la concurrence aussi bien entre acteurs qu'entre espaces de normalisation, en modifiant les fonctions de la norme et sa raison d'être. Dans ces conditions, le caractère contingent de la décision de normalisation conduit à dire que c'est la question du processus socio-économique de construction de la norme qui devient centrale. Cet article s'appuie sur des exemples issus du secteur agro-alimentaire dans le cadre européen.
