Em 2021, ainda em meio à crise social gerada pela pandemia causada pelo Coronavírus, que levou a população a manter um distanciamento social, o CIAGRO foi planejado, conduzido e vivenciado dentro do cenário crescente de temas que envolvem a agroindústria mundial. Com o tema norteador “Inovação Gestão e Sustentabilidade na Agroindústria” o CIAGRO 2021 contemplou o que há de mais moderno para a agroindústria na atualidade. O Congresso Internacional da Agroindústria – CIAGRO 2021 é um evento, concebido no âmbito das atividades desenvolvidas no Programa Internacional Despertando Vocações para as Ciências Agrárias (PDVAgro) e realizado pelo Instituto Internacional Despertando Vocações (IIDV) que tem compromisso com a democratização do conhecimento e com uma educação de qualidade. O e-book volume 1 do CIAGRO 2021, está dividido em 26 capítulos que enfatiza os diversos elos da agroindústria, evidenciando alternativas para o desenvolvimento de pesquisas, desafios e expectativas para a cadeia produtiva dos alimentos, dividindo experiências nas áreas de Inovação, Gestão e Planejamento Agroindustrial.
O leite bovino é o fluido secretado pelas glândulas mamárias da fêmea, com principal função de servir como alimento exclusivo para recém-nascidos por suprir suas demandas nutricionais, sendo um alimento de grande importância para alimentação humana devido a sua composição físico–química e nutricional. Entretanto, devido a estes fatores, o leite é considerado um meio de cultura favorável para o desenvolvimento de microrganismos contaminantes que pode afetar a qualidade físico-química e microbiológica desta matriz alimentícia. Tendo em vista que a pecuária leiteira no interior do estado de Sergipe, com destaque para a cidade de Nossa Senhora da Glória, representa importante papel social e econômico para o estado, esta pesquisa teve como objetivo a quantificação dos parâmetros microbiológica (Contagem Padrão em Placas, coliformes termotolerantes, Salmonella sp., e Contagem de Célula Somática) e a qualidade físico – química ( gordura, proteína, lactose, acidez titulável, pH, extrato seco desengordurado, densidade, temperatura e estabilidade ao alizarol 72%) no leite cru refrigerado proveniente de quatro propriedades rurais, com base em agricultura familiar, da região de Nossa Senhora da Glória, SE, em relação às exigências dos padroes microbiologicos e fisico-químicos estabelecidos pela Instrução Normativa Nº 76/2018 e a Instrução Normativa N° 77/2018, ambas do Ministério da Agricultura Pecuária e Abastecimento (MAPA). Os dados obtidos foram analisados por descrição quantitativa e comparados os as exigências dos parâmentros da legislação vigente no Brasil. Os resultados obtidos pelas análises microbiológicas demonstraram que, 50% das amostras de leite cru refrigerado analisadas apresentaram limites superiores ao exigido pela legislação vigente com relação a Contagem Padrão em Placa (CPP), demostrando possivelmente, que as ferramentas de Boas Práticas de fabricaçao ( BPF) e Boas Práticas de Ordenha ( BPO), e/ou abusos na temperatura de refrigeração do leite eram negligenciadas. Os dados obtidos para as análises fisico-quimicas demostraram que, todas as amostras ( 100%) apresentaram um ou mais parâmentros em não conformidade com os padrões exigidos pela IN 76/2018 ( MAPA). Com base nestes resultados, pode-se concluir que as amostras de leite cru refrigerado analisadas atenderam parcialmente aos requisitos exigidos pelo MAPA com relação aos parâmetros microbiológica e físico-químicos. Dessa forma, sugere-se a aplicação de ações educacionais quanto a implantação de BPF e BPO durante todas as etapas da cadeia produtiva com o intuito de obter uma melhor qualidade fisico-química e microbiológica do leite.
