Honey has been employed since antiquity due to its sensory, nutritional, and therapeutic properties. These characteristics are related to its physical and chemical composition. For example, phenolic compounds are substances that can determine antioxidant activity, as well as sensory characteristics, and can be employed as biomarkers of floral and geographical origin. This has generated a growing interest in the study of phenolic compounds and their influence in the intrinsic properties of this beekeeping product. This review aims to summarize, analyze, and update the status of the research that demonstrates the role of phenolic compounds in antioxidant activity, botanical-geographical origin, and the sensory characteristics of honey. These phenolic compounds, according to various results reported, have great relevance in honey’s biological and functional activity. This leads to research that will link phenolic compounds to their floral, geographical, productive, and territorial origin, as well as some sensory and functional characteristics.
: The antilisterial bacteriocin‐like inhibitory substance (BLIS) produced by Pediococcus parvulus VKMX133 was incorporated into protein film matrices of ethanol‐soluble corn zein (CZ), and water‐soluble whey protein isolate (WPI). Various BLIS concentrations were added to film‐forming solutions (FFS), cast, dried, and cut in circular sections (28.27 mm2). Antimicrobial activity of films was evaluated by measuring inhibition zones against Listeria innocua ATCC 33090 on tryptic soy broth (TSB) agar. BLIS released from films into water at 10 °C was determined. Film effectiveness was evaluated by measuring the reduction of L. innocua population (108 colony‐forming units [CFU]/mL) in peptone water where film sections were immersed. Film topography was analyzed by scanning electron microscopy (SEM). The minimum BLIS concentration in FFS to generate films with antimicrobial activity was 833 and 3333 arbitrary units per milliliter (AU/mL) for CZ and WPI, respectively. BLIS released into water was detected only for CZ films. Antimicrobial CZ films were more effective in reducing L. innocua population than WPI films at the same BLIS concentrations. SEM showed that surface topography was porous for CZ and more closed and compact for WPI films. BLIS can be entrapped into film protein matrices to produce edible antimicrobial packaging. However, BLIS inhibitory action against L. innocua and release were dependent on film nature and topography, and probably on hydrophobic and electrostatic interactions arising between the protein matrices and BLIS. High concentration of bacteriocin in films does not necessarily improve their effectiveness against L. innocua.
RESUMENLa fabricación artesanal del queso, es una actividad integradora del sistema producto leche. Para evaluar las condiciones de comercialización y caracterización del queso fresco en mercados y tianguis de Toluca, Estado de México, se realizó un muestreo por conveniencia, obteniendo 64 piezas de queso fresco de mercados establecidos e itinerantes, y se aplicó una encuesta abierta a comerciantes durante el periodo agosto a octubre de 2014. La procedencia de los quesos se obtuvo de las regiones: (A) Valle de Toluca, (B) otros municipios de la entidad, (C) de origen desconocido y (D) otros estados del país. Los valores de pH y temperatura del queso se midieron en el punto de venta. El contenido de materia seca, cenizas, grasa, proteína y NaCl se realizó por métodos oficiales. El origen del queso en los mercados fue mayoritariamente de la región A; la presentación comercial común fue de forma circular con un peso de 100 a 250 g. Los rangos de los parámetros evaluados fueron: pH (4.84-6.07), humedad (42.71-66.66 %), materia seca (33.3-68.9 %), cenizas (2.65-5.24 %), grasa (12-32 %), proteína (16.81-26.62 %) y NaCl (0.29-1.44 %). Las condiciones de comercialización y el abasto regional en los mercados son afectadas por un manejo inadecuado del producto y la competencia de quesos industrializados. El queso fresco comercializado en el municipio de Toluca, puede ser considerado un queso artesanal genuino propio de la región del valle de Toluca, que debe ser preservado por su interés como patrimonio en la gastronomía mexicana y su importancia socioeconómica y alimentaria regional.PALABRAS CLAVE: Queso fresco artesanal, Mercados, Valle de Toluca, Alimentos tradicionales, Patrimonio gastronómico. ABSTRACTThe aim of this study was to determine physicochemical characteristics, its origin, marketing and sales conditions of fresh cheese marketed in Toluca´s municipality, State of Mexico, Mexico. Additionally information on the milk industry and its link to the artisan cheese production as a traditional food and its regional economic importance were provided. A cross-sectional study conducted by convenience, with a sample of 64 pieces of fresh cheese purchased on fixed and itinerant markets (flea markets) during a period from August to October 2014. Temperature and pH data of the cheeses was determined at point sale. Then following the official standard methods, it was tested dry content, ash, fat, protein and sodium chloride. El chorizo rojo tradicional que se comercializa en Toluca es un producto cárnico con gran fama pero, poco se sabe sobre su calidad. El objetivo de este estudio fue determinar la calidad sanitaria de este embutido en diversos puntos de venta. A partir de tres muestreos, se analizaron 75 muestras de los cuatro principales mercados de la ciudad de Toluca y 10 carnicerías especializadas. Con base en normas oficiales mexicanas se determinaron: aw, humedad, pH, acidez y contenido de nitritos. Se realizó el conteo de bacterias mesófilas aerobias (BMA), bacterias ácido lácticas (BAL), coliformes totales y coliformes fecales; así como la detección de Salmonella spp. y Escherichia coli. El chorizo rojo tradicional no presentó diferencias significativas (P>0.05) en la mayoría de las variables fisicoquímicas y microbiológicas analizadas. Mostró un aw superior a 0.95; humedad entre 40 y 50 %; pH inferior a 5 y nitritos por debajo de los límites máximos (156 mg/kg) permitidos según normas oficiales mexicanas. El recuento de BMA fue entre 7.3 a 7.8 Log10 UFC/g y 7.8 a 8.1 Log10 UFC/g para BAL; coliformes totales entre 11.1 a 48.6 número más probable, NMP/g y coliformes fecales entre 4.9 a 9.7 NMP/g. La presencia de Salmonella spp. y E.coli spp. se detectó tanto en mercados como en carnicerías especializadas, independientemente de su naturaleza; y el porcentaje de incidencia varió entre 11.1 a 60 % y 16.7 a 43.3 %, respectivamente. El chorizo rojo tradicional de Toluca presenta características distintivas, pero es imperativo implementar programas de manejo higiénico-sanitario durante su producción, almacenamiento y comercialización, que garanticen la obtención de un embutido no sólo típico de la región, sino inocuo.
Summary Gelatin beads containing a concentrated extract of Roselle (Hibiscus sabdariffa L.) calyx rich in polyphenolic compounds were coated with sodium alginate and ionotropically gelled using CaCl2. Single‐coated beads and double‐coated beads were obtained by this technique, and the release pattern of the loaded extract was evaluated. As a result, release pattern of these compounds fits properly to a first–order Weibull distribution equation. The release rate constant decreased linearly with the number of alginate coats and with the increase in immersion time in CaCl2 and the Lag period increased significantly with the number of alginate coats. The release of H. sabdariffa's polyphenols can be well controlled manipulating the number of alginate coats and the immersion time in a CaCl2 solution, allowing not only to control the gastrointestinal segment where they could be released but also to control the release rate with the certainty that the initial concentration will be completely released showing a highly significant antioxidant activity as well.
Objetivo: caracterizar los procesos de recolección, comercialización y consumo de quelites herbáceos, principalmente nativos, en la ciudad de Toluca, México. Metodología: el trabajo se realizó en cuatro mercados de la ciudad referida. Se empleó el método etnográfico, se aplicaron guías de entrevista semiestructurada a 20 recolectores, 73 comerciantes, 69 consumidoras de quelites. Resultados: en la ciudad de Toluca y sus alrededores, los quelites se siguen recolectando, comercializando y consumiendo, pero en bajas cantidades. Se identificaron doce especies; las que se consumen principalmente son las siguientes: quintoniles (Amaranthus hybridus), verdolagas (Portulaca oleracea), chivatitos (Calandrinia micrantha), cenizos (Chenopodium berlandieri) y huauzontles (Chenopodium berlandieri subsp. nuttalliae). Se preparan, al menos, de doce maneras. Limitaciones: la investigación se restringió a los mercados de la ciudad de Toluca durante una época del año. Conclusiones: los quelites que se comercializan en los mercados tradicionales en la ciudad de Toluca se recolectan en las zonas rurales aledañas o se adquieren en los grandes centros distribuidores. Se ha presentado una reducción en su consumo en los últimos cinco u ocho años.
