Due to the fact that it has a relatively short cycle and higher yields, the tomato crop has good economic prospects and the cultivated area is increasing dayle. The aim of this study was to evaluate the physical and chemical characteristics of fruits of different tomato accessions in the greenhouse conditions in Boa Vista-RR. The following accessions were evaluated: 18 (cherry tomato), 209 (cherry tomato), 243 (CNPH 738), 101 (tomato Santa Cruz -KADA), 102 (tomato Yoshimatsu), and 246 (CNPH 0171). The experiment was conducted in a completely randomized design with six treatments and four replications. The fruit at the point of harvest, were collected properly identified and evaluated for the following characteristics: vitamin C content, pH, acidity, soluble solids, soluble solids /acidity, fresh, transverse and longitudinal diameter of the fruit, the pericarp thickness and dry matter content. The data were subjected to variance analysis and means were compared by Duncan test at 5% probability. Except for the variable content of soluble solids, the other variables showed statistical differences. All accesses have attributes suitable for eating raw. With the exception of access 101 and 102 due to high pH (Access 101) and low dry matter content (access 101 and 102), others have attributes suitable for industrial processing
Resumo -Objetivou-se com o presente trabalho estudar a qualidade de polpas congeladas, fabricadas e comercializadas no município de Boa Vista -RR, por meio de análises físico-químicas. Foram selecionadas seis Agroindústrias que produzem polpa e comercializam em estabelecimentos próprios localizados na Feira do Passarão, supermercados e casa de sucos, sendo identificadas pelas letras A, B, C, D, E e F. As variáveis estudadas foram: sólidos solúveis, acidez titulável e vitamina C, dos sabores: acerola, cajá, cupuaçu, goiaba, graviola e maracujá. O experimento foi conduzido em delineamento inteiramente casualizado, sendo analisadas seis marcas de polpas e seis frutos diferentes, com três repetições. Os resultados observados demonstram que nenhuma das empresas de processamento de polpa de frutos detalha a identificação das mesmas conforme legislação. Pelas variáveis estudadas, somente as polpas de cupuaçu das marcas C e D e graviola das marcas B, C, D e E estavam de acordo com o regulamento técnico para fixação do padrão de identidade e qualidade. Considerando-se as variáveis em questão, verificou-se que as variações nos teores encontrados e o não atendimento desses padrões podem ser minimizados por meio da padronização das matérias-primas e dos processos utilizados.Palavras-chave -Análise físico-químico. PIQ. Roraima. Caracterização.Abstract -This work aimed to study the quality of frozen pulp, manufactured and marketed in Boa Vista -RR, through physico-chemical analysis. It were selected six Agroindustries that produce and market pulp in establishments located in Fair Passarão, supermarkets and home of juices, identified by the letters A, B, C, D, E and F. The variables studied were: soluble solids, titratable acidity and vitamin C, of the flavors: acerola, caja, cupuaçu, guava, soursop and passion fruit. The experiment was conducted in completely randomized design, being analyzed six brands of fruits pulps and six different fruits, with three replicates. The observed results demonstrate that none of the companies processing fruit pulp detail their identification in accordance with the legislation. In the variables studied, only the cupuaçu pulp brands C and D and soursop brands B, C, D and E were in accordance with the technical regulation for fixing the identity and quality standard. Considering the variables in question, it was found that variations in the levels encountered and not adequacy of these standards could be minimized by the standardization of raw materials and processes used.
