A manga é um fruto tropical muito conhecido e difundido, porém quase metade do seu peso é descartado por ser considerado resíduo. Com isso, essa pesquisa objetivou caracterizar as farinhas desses resíduos (casca-FC, fibra-FF e amêndoa-FA), e elaborar extratos hidroalcóolicos (80%) com o intuito de avaliar a capacidade antioxidante e antimicrobiana. Para isso, os resíduos foram separados, desidratados a 55ºC e triturados para a obtenção das farinhas, e posteriormente foram elaborados os extratos. A FC apresentou os maiores teores de vitamina C (179,98 mg/100 g) e minerais (2,62 % de cinzas), enquanto a FF, foi superior em sólidos solúveis (6,40 °Brix) e fibras (11,89 %) e a FA mostrou-se rica em lipídeos (11,17 %). Quanto aos compostos bioativos, a FA apresentou maiores teores de compostos fenólicos (85,69 mg EAG g-1), seguido das FF e da FC (78,45 e 71,42 mg EAG g-1, respectivamente). O extrato FA apresentou maior capacidade antioxidante por FRAP e ABTS (3139,90 µmol de Fe(II)g-1 e 1370,23 µmol L-1 de Trolox), respectivamente, seguido do extrato FC (2359,90 µmol de Fe(II)g-1 e 406,90µmol L-1 de Trolox) e FF (1129,90 µmol de Fe(II)g-1 e 177,91 µmol L-1 de Trolox). O extrato FA apresentou atividade antimicrobiana contra Bacilus cereus, Escherichia coli e Salmonella Enteretidis, seguido do extrato FC (eficiente para E. coli e Salmonella Enteretidis). Dessa forma, conclui-se que essas farinhas podem ser utilizadas como fonte de enriquecimento e os seus extratos podem ser utilizados como conservante de modo a aumentar a vida útil dos alimentos.
