Analisou-se 45 amostras de pescado, sendo 15 (quinze) de tucunaré (Cichla ocellaris), 15 (quinze) de tambaqui (Collossoma macropomum) e 15 (quinze) de pirarucu (Arapaima gigas), no período de julho de 1992 a março de 1993. Foram realizadas contagens de microrganismos mesófilos, psicrófilos, determinação de coliformes totais e fecais, pesquisa de Staphylococcus aureus e salmonelas. Foram encontradas 33 (73,4%) amostras positivas para coliformes fecais e 9 (20%) para S. aureus, fora do padrão microbiológico de qualidade. A contagem de microrganismos mesófilos apresentou variação de 30 x 102 ufcjg a 25 x 106 ufcjg enquanto que a contagem dos psicrófilos, variou de 102 ufcjg a 12 x 106 ufcjg. As contagens de S. aureus apresentaram variação de < 10 ufcjg a 57 x 103 ufcjg, enquanto que a pesquisa de Salmonella sp foi negativa. Os resultados obtidos evidenciam deficiências na estocagem e manipulação inadequada da matéria-prima, visto que o nível de contaminação aumentou conforme o grau de manipulação.
