Acceptability of anchovy-based (Engraulis anchoita) preparationsResumo Este estudo teve por objetivo avaliar a aceitabilidade de duas preparações à base de anchoita em uma comunidade universitária com 69 julgadores não treinados no sul do estado do Rio Grande do Sul, devido à importância do consumo de peixe para a saúde, a necessidade de aumentar o consumo de pescado pela população brasileira e a possibilidade de utilizar um novo recurso pesqueiro autossustentável. A aceitabilidade foi avaliada por meio de uma escala hedônica de 7 pontos e a intenção de compra por uma escala de 5 pontos. A composição centesimal das preparações foi analisada em laboratório, seguindo metodologia do Instituto Adolfo Lutz. Os resultados demonstraram que a pizza e o arroz de forno com anchoita obtiveram excelente aceitabilidade, de 92% e 86%, respectivamente. Houve diferença significativa entre as médias obtidas das preparações, em que a pizza obteve melhor aceitabilidade e melhor índice de intenção de compra do que o arroz de forno com anchoita. Na análise da composição centesimal das preparações, a pizza apresentou maior teor de proteína e gordura, devido à utilização de outros ingredientes fontes de proteína e óleo vegetal. Conclui-se que as duas preparações com anchoita podem ser um excelente veículo para incluir o peixe mais frequentemente nos hábitos alimentares da população e aumentar o consumo de pescado no Brasil.
