➤ Schon seit Jahrtausenden versuchen Menschen mit dem Duft von Aromen und wohlriechenden Kräutern Krankheiten zu vertreiben, die Gesundheit zu stärken und sich ihre Umgebung durch besondere Düfte angenehmer zu gestalten. Frühe Kulturen nutzten Pflanzen nicht nur zum Essen, sondern auch zu Räucherungen, sowohl zu medizinischen als auch zu religiösen Zwecken. Sie erkannten, dass der Rauch verschiedener Holzarten unterschiedliche Wirkungen hervorrief. Man glaubte, der Rauch vertreibe die Dämonen und ziehe gute Einflüsse an. Hippokrates von Kos (ca. 460-377 v. Chr.), der als Begründer unserer modernen Medizin gilt, nennt in seinen Schriften eine Vielzahl von aromatischen Heilpflanzen. Im Mittelalter war es v.a. der bekannteste Heilkundige der arabischen Welt, Avicenna (980-1037), der über 800 medizinische Pflanzen beschrieb und auf der Suche nach Gewinnungsmethoden der wertvollen Duftstoffe zum Erfinder der Wasserdampfdestillation wurde. Alte arabische Handschriften enthalten Zeichnungen von Destillierapparaten, die vom Prinzip her nicht anders funktionieren als unsere heutigen. Was heute unter Aromatherapie verstanden wird, geht auf den französischen Chemiker René Maurice Gattefossé zurück, der im Jahr 1928 auf die Heilwirkung isolierter ätherischer Öle hinwies. Gleichzeitig ergibt sich daraus aber auch eine ethisch-moralische Verpflichtung gegenüber den Betroffenen, beispielsweise, wenn diese nicht mehr in ausreichendem Maße für ihre Ernährung sorgen können. Strategien wie die Ernährungsbiografie oder gemeinsame Mahlzeiten in angenehmer Atmosphäre, helfen dabei, eine adäquate Nährstoffzufuhr sicherstellen und Menschen mit Demenz vor Mangelernährung zu schützen. Zudem sollten ihren Vorlieben und veränderte Ess- und Trinkgewohnheiten (z. B. nächtliches Hungergefühl) berücksichtigt werden.

Bei primären Demenzen gehen die Hirnfunktionen schrittweise und irreversibel verloren. Sekundären Demenzen liegen meist außerhalb des Gehirns gelegene organische Grunderkrankungen zugrunde. Wird die Grunderkrankung rechtzeitig behandelt, kommt es häufig zum Rückgang der demenziellen Symptome. 10 % aller Demenzen zählen zu den sekundären, 90 % zu den primären Formen [3, 6]. Zurzeit leben in Deutschland etwa 1-1,2 Mio. Demenzkranke. Infolge steigender Lebenserwartung der Bevölkerung ist mit einem steigenden Anteil Demenzkranker zu rechnen. Außerdem zählen die Demenzerkrankungen zu den schwerwiegenden psychischen Erkrankungen. Diese Erkrankung tritt mit zunehmendem Lebensalter immer häufiger auf und ist die am meisten gestellte Diagnose der psychischen Erkrankungen bei den über 60-Jährigen.
