Se realizó una investigación con el fin de verificar la presencia de bacterias de la familia Enterobacteriaceae y una variedad de otros bacilos gram-negativos así como microorganismos considerados como indicadores de contaminación fecal en muestras de refrescos de fruta natural, ofrecidos al consumo público. El objetivo de este trabajo fue evaluar la calidad microbiológica del refresco natural comercializado en el mercado central, en el municipio de Colcalpirhua - Cochabamba / Bolivia. Se analizaron 13 muestras y se observó la presencia de varios tipos de bacterias y algunas de ellas patógenas, como la E. coli. De las muestras, 6 confirmaron la presencia de E. coli, 6 presentaron otros microorganismos, sólo 1 muestra estaba ausente de microorganismo, contrariando la legislación vigente donde estos microorganismos deben estar ausentes. Por lo tanto, se concluye que los refrescos de frutas comercializadas en el mercado del municipio de Cocalpirhua, no están siendo manipulados en las condiciones higiénico-sanitarias adecuadas, o ocurrieron fallas durante el procesamiento y/o transporte del producto ofreciendo riesgos a la salud del producto al consumidor.
