A s perdas pós-colheita em hortifrutícolas variam muito de região para região e estão relacionadas ao manuseio desde a colheita até chegar-se ao consumidor final. As alterações no tomate durante esse processo são principalmente do tipo mecânica, fisiológica ou patológica. Danos mecâni-cos ocorrem durante o manuseio do produto (colheita, seleção, embalagem, transporte e exposição). As injúrias mecânicas causam uma série de alterações metabólicas e fisiológicas em tomates, levando ao aparecimento de sintomas (Fluck & Halsey, 1973;Halsey, 1955) e internos típicos (Moretti et al., 1998; Sargent et al., 1992), tais como: frutos submetidos à injúria física apresentaram alteração na qualidade, em especial no sabor e aroma (Moretti & Sargent, 2000). A incidência e a severidade do dano físico dependem da energia de impacto, do cultivar em estudo, do número de impactos, diâmetro dos frutos e do estádio de amadurecimento (Halsey, 1955). Danos físicos são cumulativos durante as práticas de manuseio pós-colheita (Sargent et al., 1992). Portanto, as várias etapas de manuseio do fruto, desde o campo até o consumidor, devem ser cuidadosamente coordenadas e integradas para maximizar a qualidade do produto (Sargent et al., 1992). Em geral, danos por impacto na pós-colheita podem ocorrer quando os frutos recebem quedas altas ou colidem com superfícies não protegidas ou com outros frutos, ou ainda, devido ao manuseio inadequado (Halsey, 1955).A falta de um sistema adequado, que promova o correto manuseio dos produtos, com utilização de embalagens RESUMOA classificação manual para tomate de mesa e a utilização da caixa K para transporte ainda predomina em diversas regiões no Brasil. O presente trabalho buscou caracterizar frutos da cultivar Débora provenientes de plantios comerciais quanto ao estádio de maturidade, diâmetro e defeitos físicos e danos na etapa de colheita e no recebimento do produto na CEASA, de Campinas. Objetivouse também avaliar a incidência de danos físicos, a perda de peso e alterações na qualidade em frutos retirados diretamente no campo de produção e nas etapas da colheita (1), recebimento em um barracão para classificação manual (2), após classificação manual e embalagem (3) e na comercialização do produto na CEASA (4). Para está amostragem retirou-se 120 frutos em cada etapa. Defeitos e danos físicos presentes foram analisados utilizando-se uma escala de notas. Frutos amostrados em campo já demonstravam danos físicos, provenientes principalmente da abrasão com as estacas de bambu e fios de amarrio, ataque de insetos e distúrbios fisiológicos e nutricionais. Os frutos foram colhidos predominantemente no está-dio de maturação verde-maduro (48%). Na amostragem retirada na CEASA dois dias após a colheita está porcentagem era de 26,3%, com misturas de diâmetros, sendo que 55,4% dos frutos encontravam-se entre 50-60 mm e 43,9% acima de 60 mm. RESUMO:No Brasil, nos últimos anos, tem aumentado o beneficiamento e a classificação de frutas e hortaliças em equipamentos. O objetivo deste trabalho foi caracterizar a etapa de limpeza de dois equipamentos de beneficiamento de tomate de mesa, um nacional e outro importado, instalados na região metropolitana de Campinas -SP. A caracterização foi realizada quanto ao número, tipo e velocidade de rotação das escovas, aplicação de água, tempo de permanência dos frutos e eficiência de limpeza. O tempo de permanência foi mensurado com relação ao tamanho dos frutos, segundo os padrões da CEAGESP. Para mensurar a eficiência, foi desenvolvido um equipamento composto de um anel deslizante envolvido por um pano branco. As amostragens foram realizadas antes e após a etapa de limpeza e avaliadas utilizando colorímetro HUNTER Lab. Por meio dos resultados, observaram-se diferenças entre os dois equipamentos, em que o importado apresentou menor número de escovas, rotações mais baixas e maior consumo de água que o nacional. No equipamento nacional, o tempo de permanência dependeu do tamanho dos frutos, não sendo encontrada essa correlação no equipamento importado, e ambos tiveram a mesma eficiência de limpeza. Conclui-se que a limpeza está relacionada à interação entre os parâmetros estudados, sendo também necessário realizar manutenções nos equipamentos das unidades para a melhoria no funcionamento. CLEANING EFFICIENCY IN PACKING LINES FOR FRESH MARKET TOMATOESABSTRACT: On the last years, in Brazil, sorting and classifying fruits and vegetables using packing lines have increased. This work aimed at characterizing the cleaning process for fresh market tomatoes at two packing lines, one imported and one national located at Campinas, São Paulo State. Characterization included data, number, types and brushes velocity, water use, fruit standing time and cleaning efficiency. Standing time was measured correlating to fruit diameter (CEAGESP). For measuring cleaning efficiency an equipment was developed that was mainly composed of a ring involved with white cloth. Samples were taken before and after the cleaning step and evaluated using a colorimeter HUNTER Lab. The results showed a strong difference between the two equipments. The imported equipment showed lower number on brushes and rotation than national one, however a higher water consumption. For imported equipments this relation was not found. Both packing lines showed the same cleaning efficiency. Cleaning efficiency is related to be an interaction among the studies parameters, and it could be necessary a better management than the one used on both equipments.
RESUMO:A etapa de limpeza no sistema de beneficiamento do tomate de mesa é essencial para a aceitação do produto pelo consumidor, pois o grau de limpeza dos frutos está diretamente relacionado com a qualidade do produto. Entretanto, a etapa de lavagem, nos atuais equipamentos de limpeza, utilizada em unidades comerciais de beneficiamento, demanda volume excessivo de água, trazendo sérias preocupações ambientais. Este trabalho teve como objetivo comparar a eficiência de limpeza em dois sistemas, avaliando diferentes configurações operacionais relacionadas com a rotação de escovas, vazão do sistema e tempo de permanência do fruto sobre o jato. Comparou-se o sistema convencional utilizado em equipamentos comerciais com o sistema composto por um bocal de spray do tipo cone cheio. Os resultados demonstraram que a eficiência de limpeza não está diretamente relacionada com o volume de água utilizado, mas, sim, à pressão da água, associado ao tempo de permanência dos frutos e à rotação das escovas. Portanto, o uso de spray em sistemas de limpeza de frutos de tomate pode trazer benefícios tanto para a eficiência de limpeza, com incrementos superiores a 13%, como para o meio ambiente, trazendo redução no consumo de água. OPTIMIZING CLEANING EFFICIENCY AT A FRESH MARKET TOMATO PACKING LINEABSTRACT: The post-harvesting cleaning process in fresh market tomatoes production is essential to the consumer acceptance, since the degree of dirtiness of the fruits is directly related to its quality. However, the washing stage of the cleaning process of commercial packinghouse demands an excessive water volume, bringing serious environmental concerns. The objective of this work was to compare the cleaning efficiency in two cleaning systems through the evaluation of different operational conditions of the cleaning process, related with the brush rotation, water flow and fruit standing time under the system. It was compared the conventional system utilized in commercial equipment with a system using commercial sprays. The results showed that the cleaning efficiency was not directly related to the water volume used, but to the water pressure, standing time and brushes rotation. Therefore, the use of commercial sprays can bring benefits to the cleaning efficiency, increasing it up to 13%, and to the environmental, decreasing water consumption.
