Temperature and quality of the available food are important factors that in£uence the physiology of oysters; however, the combined e¡ects have not been well studied. We evaluated the impacts of the temperature and diet on the growth, survival and biochemical composition in the Paci¢c oyster Crassostrea gigas spat, cultured in the laboratory for 8 weeks at 23, 26, 29 and 32 1C and fed Isochrysis sp.-Pavlova lutheri (IP) and Dunaliella tertiolecta (Dt). The growth and biochemical composition showed a pattern, which changed in response to rising temperature. The shell length was signi¢cantly longer, in spat fed the IP diet, except at 32 1C, where both diets produced poor growth results. The survival was o50% after 5 weeks at 32 1C, whereas at all other temperatures it was 488%. High temperatures directly increased lipids and saturated fatty acids, while the proteins, carbohydrates and unsaturated fatty acids decreased. High temperatures achieved in the environment, as those reached on clear summer days during low tides, are an important stressor in oyster spat, especially when the quality of the available food is poor.
ResumenEl objetivo de esta investigación es determinar el efecto del tipo de alimento -uno vivo, representado por Daphnia pulex y uno balanceado de la marca Purina Camaronina 35 con 35% de proteínas-y la calidad del agua -presencia y ausencia de microorganismos, y sólidos suspendidos-en el crecimiento y sobrevivencia de postlarvas del crustáceo Cambarellus montezumae. Para lo cual, se formaron 4 tratamientos que se evaluaron durante 14 semanas, mediante la realización de observaciones y biometrías periódicas como seguimiento del desarrollo en los organismos. Los datos obtenidos registraron diferencias significativas entre tratamientos (p< 0.05), en donde los mejores resultados de crecimiento y sobrevivencia se obtuvieron en los organismos alimentados con el alimento balanceado (M 2 y M 4 ), independientemente de la calidad del agua. Además, se obtuvieron valores de proteínas de hasta 45% y en la fracción lipídica se identificaron los ácidos grasos 20:4 n6 (ARA), 20:5 n3 (EPA) y 22:6 n3 (DHA) al considerar el cuerpo total del organismo. Lo antes mencionado incrementa el interés por el cultivo sustentable de C. montezumae para ser utilizado en la industria alimentaria a través de su adición en productos alimentarios de consumo humano debido a su contenido de biomoléculas de importancia biológica.
El estudio realizó un análisis comparativo de la utilización de la carne de bagre (I. punctatus) y carpa (C. carpio) para la elaboración de hamburguesas, considerando el impacto de la especie en la factibilidad de manufactura, la aceptación organoléptica, el valor nutricional, el contenido de microorganismos y el costo de las mismas. Los resultados indican que el grado de frescura de la carne y la inocuidad del proceso evitaron la presencia de microorganismos patógenos en el producto final. Asimismo, se identificó que la especie no influye en la obtención de una óptima hamburguesa, ni en su aceptación organoléptica o contenido bromatológico. El balance de materia y energía indica un mayor rendimiento de producción con la carne de I. punctatus debido a que registró el menor porcentaje de mermas por componentes no utilizados, lo cual proporciona una mayor cantidad de hamburguesas a un menor costo.
