RESUMOO leite possui constituintes de grande valor nutricional e sua produção e consumo têm crescido a cada ano mundialmente. Associado à sua importância econômica, este produto é constantemente alvo de fraudes e adulterações, as quais trazem como consequência grandes prejuízos à indústria e preocupação aos órgãos de saúde pública. Neste sentido, objetivamos analisar, de forma retrospectiva, as causas que determinaram o não recebimento do leite cru refrigerado em usina de beneficiamento sob Inspeção Federal, da região do Agreste Meridional de Pernambuco, durante o período que compreendem os meses de março a outubro de 2016, com base no arquivo de registros da empresa. Foram identificados 122 casos de não recebimento de leite cru refrigerado. Destes, a principal causa foi a adição de água (34,5%), seguida por acidez acima do limite estabelecido pela empresa, máximo 0,16 g de ácido lático/100 mL de leite (30,3%), e presença de resíduos de antibióticos no leite (26,2%). Desta forma, reforçou-se a importância do controle de qualidade e de identidade do leite realizado pela empresa, para evitar que um leite adulterado seja processado pela indústria e disponibilizado ao consumidor. Reforçou-se, também, a necessidade de aprimoramento da política leiteira, para fins de esclarecer, orientar e incentivar os produtores com relação a implementação das Boas Práticas Agropecuárias de produção do leite, incluindo a necessidade da realização de uma Ordenha Higiênica, do respeito do tempo de carência dos ABSTRACT Milk has constituents of great nutritional value and its production and consumption have grown every year worldwide. Associated with its economic importance, this product is constantly the target of fraud and adulteration, which causes as a consequence great damages to the industry and concern to the public health organs. In this sense, we aimed to analyze, retrospectively, the causes that determined the non-receipt of the refrigerated raw milk in a dairy industry with Brazilian Federal Inspection, in the region of meridional "Agreste" of Pernambuco (Brazil), during the period that comprise the months of March to October 2016, based on files of the industry records. In this period, 122 cases of non-receipt of refrigerated raw milk by the industry were identified. Of these, the main cause was water addition (34.5%), followed by milk with acidity above the limit established by the industry, maximum 0.16 g of lactic acid/100 mL of milk (30.3%), and presence of antibiotic residues in milk (26.2%). Thus, the importance of quality and identity control of the milk performed by the company was reinforced, to prevent the industry from processing adulterated milk that will be later made available to the consumer. L’élevage laitier est une activité d’une importance énorme non seulement au Brésil mais dans toute la planète, exerçant une influence énorme sur l’économie, générant des emplois non seulement dans les zones rurales mais tout au long de la chaîne de production, offrant du lait et des dérivés qui sont parmi les principaux aliments de la chaîne alimentaire car il est riche en protéines et en vitamines. Cependant, bien que le Brésil soit l’un des plus grands producteurs au monde, le lait brésilien doit encore être plus présent à l’échelle internationale. Cette faible présence à l’étranger est due, entre autres, au coût élevé de la production et à sa faible qualité. Sur cette base, cette recherche vise à étudier le panorama de la chaîne de production laitière au Brésil. La méthode de recherche est basée sur une revue de littérature à caractère descriptif et exploratoire. En conséquence, la recherche montre l’importance que l’activité laitière a acquise dans le pays. De plus, les politiques publiques qui valorisent le secteur encouragent la production de produits laitiers avec qualité et sécurité et créent les conditions pour que les technologies développées atteignent les producteurs.
La producción lechera es una actividad de enorme prominencia no solo en Brasil sino en todo el planeta, ejerciendo una enorme influencia en la economía, generando empleos no solo en el área rural sino en toda la cadena de producción, ofreciendo leche y derivados que se encuentran entre los principales alimentos de la cadena alimentaria, ya que es rica en proteínas y vitaminas. Sin embargo, a pesar de que Brasil es uno de los mayores productores del mundo, la leche brasileña aún necesita estar más presente internacionalmente. Esta baja presencia en el extranjero se debe, entre otras razones, al alto costo de producción y su baja calidad. Sobre esta base, esta investigación tiene como objetivo relevar el panorama de la cadena de producción de leche en Brasil. El método de investigación se basa en una revisión de la literatura con carácter descriptivo y exploratorio. Como resultado, la investigación muestra la importancia que ha adquirido la actividad láctea en el país. Además, las políticas públicas que valoran el sector fomentan la producción de productos lácteos con calidad e inocuidad y crean las condiciones para que las tecnologías desarrolladas lleguen a los productores.
Dairy farming is an activity of enormous prominence not only in Brazil but throughout the planet, exerting enormous influence on the economy, generating jobs not only in the rural area but throughout the production chain, offering milk and derivatives that are among the main foods in the food chain as it is rich in protein and vitamins. However, despite Brazil being one of the largest producers in the world, Brazilian milk still needs to be more present internationally. This low presence abroad is due, among other reasons, to the high cost of production and its low quality. On this basis, this research aims to survey the panorama of the milk production chain in Brazil. The research method is based on a literature review with a descriptive and exploratory nature. As a result, the research shows the importance that dairy activity has acquired in the country. Moreover, public policies that value the sector encourage the production of dairy products with quality and safety and create the conditions to make that the developed technologies reach the producers.
