O queijo tipo Minas Frescal se enquadra em um dos mais consumidos, devido ao custo benefício oferecido aos consumidores. Levando em consideração o alto consumo na região e o elevado risco de contaminação do mesmo foi realizado o presente estudo a fim de analisar os produtos que estão dispostos à venda e identificar se há diferenças na qualidade microbiológica entre os queijos de produção artesanal e os de produção industrial. Foram analisadas 10 amostras de queijo minas frescal na cidade de Uberlândia-MG, sendo que 5 eram de produção artesanal e as outras 5 de produção industrial. Para a análise, foram realizadas as contagens de mesófilos, Staphylococcus coagulase positiva, coliformes totais e termotolerantes, avaliação da presença de Salmonella spp. e identificação de bactérias da família Enterobacteriaceae. De um modo geral, as amostras de produção industrial tiveram resultados melhores que o outro grupo, pois todas de produção artesanal estavam inadequadas em relação aos mesófilos. Além disso, três amostras deste grupo estavam com Coliformes a 45ºC e duas com Staphylococcus coagulase positivo acima do que é preconizado e uma com a presença de Salmonella spp. As principais bactérias encontradas foram: Serratia spp., Hafnia spp., Enterobacter spp. e Klebsiella. Das amostras envolvidas no estudo 90% estavam inapropriadas para o consumo, sendo que a única amostra adequada é de produção industrial.
Alimentos minimamente processados são aqueles que tenham sofrido algum tipo de alteração em sua matéria prima, mantendo a qualidade do produto in natura. Este produto, devido ao seu processamento, sofre alterações microbiológicas que são de extrema importância, uma vez que sua contaminação pode gerar doenças transmitidas por alimentos. O presente estudo teve como objetivo analisar microbiologicamente alimentos minimamente processados (cenoura e abobrinha) comercializados em supermercados da cidade de Uberlândia-MG. Para a análise foi realizada a contagem de mesófilos, coliformes totais e termotolerantes, avaliação da presença de Staphylococcus coagulase positiva e Salmonella spp., além de outras bactérias da família Enterobacteriaceae. Apenas uma amostra de cenoura apresentou contaminação por coliformes termotolerantes acima do limite permitido pela legislação, Staphylococcus coagulase positiva e Salmonella spp. não foram encontrados em nenhum dos alimentos e as principais bactérias isoladas nas hortaliças foram Pantoea spp., Serratia spp. e Providencia spp. Concluímos que a maioria das amostras estava em conformidade com a legislação vigente.
