A segurança alimentar é de fundamental importância para a não disseminação de Doenças Transmitidas por Alimentos (DTAs) e como as preparações de quibe cru exigem grande manipulação, isto favorece a sua contaminação. O objetivo deste trabalho foi avaliar as condições microbiológicas de preparações de quibe cru, prontas para o consumo, na cidade de Uberlândia/MG. Em 10 amostras de quibe cru foram avaliadas a contagem total de microrganismos mesófilos, coliformes totais e termotolerantes, avaliação da presença de Staphylococcus coagulase positiva e Salmonella spp., e identificação de outros membros de família Enterobacteriaceae. Foram encontradas 40% das amostras apresentando contaminação por coliformes termotolerantes, com valores acima do preconizado pela RDC 12/2001. Não foi encontrado Staphylococcus coagulase positiva em nenhuma das amostras e 30% estavam contaminadas por Salmonella spp., sendo assim 60% eram inapropriadas para consumo. Em 10 amostras analisadas foram isoladas 20 colônias com características fenotípicas diferentes, nestas os principais gêneros encontrados foram Klebsiella, Enterobacter e Serratia liquefaciens. Das dez amostras dos estabelecimentos avaliados 80% apresentaram a presença de Hafnia alvei. Estes achados evidenciam riscos à segurança alimentar e a saúde pública sendo necessária a urgência na melhoria de boas práticas de manipulação, na tentativa de controlar os pontos críticos na preparação deste alimento.
Alimentos minimamente processados são aqueles que tenham sofrido algum tipo de alteração em sua matéria prima, mantendo a qualidade do produto in natura. Este produto, devido ao seu processamento, sofre alterações microbiológicas que são de extrema importância, uma vez que sua contaminação pode gerar doenças transmitidas por alimentos. O presente estudo teve como objetivo analisar microbiologicamente alimentos minimamente processados (cenoura e abobrinha) comercializados em supermercados da cidade de Uberlândia-MG. Para a análise foi realizada a contagem de mesófilos, coliformes totais e termotolerantes, avaliação da presença de Staphylococcus coagulase positiva e Salmonella spp., além de outras bactérias da família Enterobacteriaceae. Apenas uma amostra de cenoura apresentou contaminação por coliformes termotolerantes acima do limite permitido pela legislação, Staphylococcus coagulase positiva e Salmonella spp. não foram encontrados em nenhum dos alimentos e as principais bactérias isoladas nas hortaliças foram Pantoea spp., Serratia spp. e Providencia spp. Concluímos que a maioria das amostras estava em conformidade com a legislação vigente.
