ResumenEl objetivo del estudio fue analizar el contenido de nutrientes de la malanga cultivada en la zona rural del Caribe colombiano. A muestras de malanga se le realizaron análisis proximales, de vitaminas y minerales, con el empleo de los métodos Kjeldahl, Soxhlet, hidrólisis ácido-base, incineración, cromatografía y absorción atómica. Los resultados se compararon con el contenido de nutrientes del camote, la papa, la yuca y el ñame. Los resultados obtenidos fueron 24.99 % de proteínas, 0.53 % de grasa, 59.36 % de carbohidratos, 7.65 % de ceniza, 4.88 % de fibra bruta, 2.59 % de humedad, 8.35 mg/kg de hierro, 94.45 mg/kg de calcio, 242.37 mg/kg de magnesio, 6.21 mg/kg de zinc, 0.188 mg/100 mg de vitamina C, 0.047 mg/100 mg de Vitamina B1, y 0.078 mg/100 mg de Vitamina B3. El contenido de proteínas y grasas fue superior al de los otros vegetales comparados. AbstractThe aim of the study was to analyze the nutrient content of the taro cultivated in rural areas of the Colombian Caribbean. To the samples of taro, proximal analyzes of vitamins and minerals were carried out, using the Kjeldahl, Soxhlet methods, acid-base hydrolysis, incineration, chromatography and atomic absorption. The results were compared with the nutrient content of sweet potato, potatoes, cassava and yams. The results obtained were 24.99% protein, 0.53% fat, 59.36% carbohydrate, 7.65% ash, 4.88% crude fiber, 2.59% moisture, 8.35 mg / kg of iron 94.45 mg / kg calcium 242.37 mg / kg magnesium, 6.21 mg / kg of zinc, 0.188 mg / 100 mg of vitamin C, 0.047 mg / 100 mg of vitamin B1, and 0.078 mg / 100 mg vitamin B3. The content of proteins and fats was higher than the other vegetables compared.
El consumo de frutas y verduras en la alimentación diaria puede prevenir enfermedades crónicas no transmisibles como las cardiovasculares, diabetes mellitus, enfermedades isquémicas del corazón, cerebrovasculares, crónicas de las vías respiratorias y el cáncer, por su elevado contenido de micronutrientes, fibra dietética y compuestos bioactivos; sin embargo el consumo de estos alimentos en Colombia es limitado. El objetivo de esta investigación fue identificar la composición nutricional de las hojas del silvadero (Geoffroea spinosa Jacq) de la finca Los Tres del municipio de Tubará (Atlántico). Para la obtención de la muestras se recolectó la planta, se seleccionaron la hojas, luego se sometieron a lavado, secado y molienda. Se determinaron los parámetros pH, humedad, cenizas, grasas, proteínas, fibra bruta, carbohidratos, zinc, calcio, hierro y magnesio. Los resultados revelaron 6,21 de pH, 3,335 % de humedad, 9,531 % de cenizas, 0,639 % de grasa, 20,535 % de proteínas, 20,386 % de fibra bruta, 45,575 % de carbohidratos, 56,53 mg/100 g de zinc, 5793,90 mg/100 g de calcio, 241,27 mg/100 g de hierro, 3250,64 mg/100 g de magnesio. Las hojas del silvadero son una importante fuente de nutrientes necesarios para la alimentación de los seres humanos, constituyéndose en una alternativa de consumo vegetal por su alto contenido de proteínas, carbohidratos, fibra, calcio y magnesio.
The objective of the study was to characterize the root of the Pachira aquatic Aubl, collected from the gardens of the Universidad del Atlántico. For years, roots have represented an alternative for solving food security problems due to their nutritional value, especially for indigenous communities; however, being carriers of secondary metabolites, beneficial for health, their consumption has decreased and their potential in the agroindustry and the pharmaceutical industry wasted. Pachira aquatic Aubl is a plant species abundantly distributed in the Colombian Caribbean region, resistant to wide ranges of temperature, humidity and salinity, develops roots that have not studied; the infusion of that of its bark considered with hypoglycemic effects. The characteristics of humidity, ash, crude fiber, proteins, lipids, carbohydrates were determined; minerals such as calcium, magnesium, zinc and iron, as well as the amino acid Lysine; The proximal analysis performed by AOAC methods, minerals by atomic absorption spectrophotometry and Lysine analysis by ultrafast liquid chromatography. The mean, standard deviation, variance and confidence intervals obtained from the results of the analyzes. The study reported an average composition of the root of the Pachira aquatic Aubl of: carbohydrates (72.25%), humidity (13.53%), ashes (4.64%), proteins (4.53%), crude fiber (4.39%), fat (0.64%), calcium (188.202 mg/100 g), iron (0.211 mg/100 g), zinc (0.060 mg/100 g), magnesium (0.060 mg/100 g) and lysine 0.032 mg/100 g. The nutrients found in a greater proportion were carbohydrates and calcium, also highlighting the presence of the amino acid Lysine.
