Naturalmente os alimentos estão em constantes modificações, representadas por alterações físicas, enzimáticas, microbiológicas e químicas, como as reações de oxidação de lipídios e outros nutrientes susceptíveis à ação do oxigênio e radicais livres, provocando por sua vez o aparecimento de sabores e odores desagradáveis, modificações do valor nutricional e a diminuição da vida de prateleira dos alimentos.Para retardar tais processos, a indústria faz uso de aditivos químicos constantemente questionados pelos consumidores quanto aos seus possíveis efeitos negativos à saúde. Neste contexto, há grande interesse em encontrar nas plantas condimentares, princípios ativos que possuam ação antioxidante e que possam contribuir para a conservação de alimentos, sendo estes produzidos sem danos ao meio ambiente e à saúde humana.Plantas condimentares, tais como as pimentas e pimentões do gênero Capsicum, que sempre foram usadas pelos índios e civilizações antigas para tornar os alimentos mais agradáveis ao paladar, além de serem utilizadas como conservantes em alimentos, são fontes de antioxidantes naturais como a vitamina E, vitamina C e carotenoides (REIFSCHNEIDER, 2000). Estas pimentas também são ricas em capsaicinoides, compostos fenólicos responsáveis pelo sabor pungente ou picante (CARVALHO; BIACHETTI, 2004).O Brasil é o segundo maior produtor de pimenta no mundo (RISTORI et al., 2002) e centro da diversidade do gênero Capsicum (REIFSCHNEIDER, 2000). Essa hortaliça está difundida em todas as regiões do Brasil, sendo que as principais áreas de cultivo são as regiões Sudeste e Centro-Oeste. The concentration of total phenolics and capsacinoids present in the peppers was also determined. The results showed that the FC and the FA peppers showed higher concentrations of total phenolics and capsacinoids, and that the cumari pepper was the species with higher concentrations of these compounds. The best antioxidant activity according to the β-Carotene/Linoléico Acid System were obtained for the EB and the FA cambuci pepper, followed by the EB malagueta pepper. RESUMO -Foram utilizados 28 leitões machos, com peso médio de 28,95 kg, para determinação das perdas endógenas fecais, da absorção verdadeira e da biodisponibilidade do fósforo de diferentes fontes. Utilizou-se o delineamento em blocos casualizados, com sete tratamentos e quatro repetições e um animal por unidade experimental. As rações foram à base de milho e de farelo de soja e o fósforo (P) foi suplementado com os fosfatos bicálcico (FBC), monobicálcico (MBC), superfosfato triplo (ST), superfosfato simples (SS), rocha catalão (ROCHA) e ácido fosfórico (AcF) e da ração-controle sem o P suplementar (CONT). Consumo, excreção por fezes e urina, retenção e absorção do fósforo foram inferiores na ração com menor nível de fósforo. O P inorgânico suplementar não influenciou o consumo, o P endógeno fecal e o P retido. Entretanto, a excreção de P nas fezes foi menor nos animais que consumiram SS e maior naqueles que consumiram ROCHA, enquanto a excreção de P na urina foi maior nos animais que consumiram AcF e menor naqueles que consumiram ROCHA. The experiment was arranged in randomized blocks, with seven treatments and four repplicates and one pig/box. The diets were corn and soybean meal-based and the phosphorus (P) was supplemented through different phosphate sources: dicalcium (FBC), monodicalcium (MBC), triple superphosphate (ST), simple superphosphate (SS), Catalão rock (ROCHA) and phosphoric acid (AcF) and diet control without supplemental P (CONT). -The objective of this study was to determine the digestibility coefficient (DC) of nutrients and the digestible energy (DE), and metabolizable energy (ME) values of distillers dried grains with solubles (DDGS) produced in Brazil by different methods. Eight barrows with 23.3±4.1 kg were housed in metabolic cages in a randomized block design and fed diets containing 0, 200, 400, and 600 g kg -1 of corn DDGS. We determined the digestibility of dry matter (DM), organic matter (OM), crude protein (CP), ether extract (EE), mineral matter (MM), neutral detergent fiber (NDF), and gross energy (GE) by the total collection (TC) and chromium oxide marker (Cr) methods. Distillers dried grains with solubles provided the respective DM, OM, CP, EE, MM, NDF, and GE values of 910, 863, 286, 66.9, 46.8, 500 g kg -1 , and 4,780 kcal kg -1 . The DE and ME values of DDGS were 3,739 and 3,401 kcal kg -1 and 3,691 and 3,213 kcal kg -1 as determined by TC and Cr methods, respectively. The growing inclusion of DDGS did not affect the DE or ME values. The digestibility coefficients of DM, OM, CP, EE, MM, and NDF were 767, 765, 827, 691, 883, and 821 g kg -1 , respectively, by the total collection method. The Cr underestimated the values of all variables compared with TC method. Levels up to 600 g kg -1 of the test ingredient do not influence the DE and ME of DDGS, but compromises the digestibility coefficients of DM, OM, and NDF.
The effects of dietary inclusion levels of the association of glutamine with glutamic acid (AminoGut: AmG) on the performance, gastrointestinal morphophysiology, and diarrhea incidence of piglets weaned at 21 days of age were evaluated. In the experiment, 120 piglets with 6.24 ± 1.00 kg initial weight were distributed according to a randomized block experimental design into five treatments with six replicates of four animals each. The following treatments were applied: negative control diet (0% AmG); 0.5% AmG; 1.0% AmG; 1.5% AmG; positive control diet (0% AmG, 4% inclusion of porcine plasma). The inclusion of 1.0% AmG, as compared to the positive control diet, improved weight gain, feed intake and feed conversion ratio. The lowest diarrhea score was observed when 1.0% AmG was included, whereas the best villus height and villus:crypt ratio were obtained with the inclusion of 0.82% AmG. Villus height, crypt depth, and villus:crypt ratio values obtained with 1.0% AmG were similar to those obtained with the positive control diet, except in the period of 21 to 28 days, when the diet with 1.0% AmG promoted higher villus:crypt ratio. The supplementation of 0.5 and 1.0% AmG affected organ weights, and reduced digestive content pH in the pylorus and in the ileum relative to the positive control diet. The dietary supplementation of 1% glutamine associated with glutamic acid improves the performance and the morphophysiology of piglets weaned at 21 days of age.
RESUMO -Foi conduzido um experimento com o objetivo de avaliar níveis de ácido fólico em dietas suplementadas com ácido fórmico para leitões de 21 a 48 dias de idade. Foram utilizados 160 leitões de 5,67 ± 0,90 kg, em um delineamento experimental de blocos casualizados, com cinco tratamentos, oito repetições e quatro animais por repetição. Levels of folic acid in diets containing formic acid for piglets from 21 to 48 days old ABSTRACT -A trial was conduced with to evaluate the levels of folic acid in diets supplemented with formic acid for piglets from 21 to 48 days old. 160 crossbred piglets were used with initial average weight of 5.67 ± 0,90 kg in a completely randomized experimental block design, with five treatments, eight replications of four animals each. Two basal diets with increasing formic acid levels (0.24 and 0.20%) were formulated (pre-starter I = from 21 to 35 days old and pre-starter II = from 36 to 48 days old) to meet the animal nutritional requirements. The treatments consisted of five dietary levels of folic acid: 0, 0.30, 0.60, 0.90, and 1.20 mg/kg. Piglets performance was evaluated at three periods: from 21 to 35 days, from 36 to 48 days and from 21 to 48 days. At 49 th day, animals were fasted and blood samples of eight piglets from each treatment were collected for folate quantification. No effect of dietary levels of folic acid on daily average feed intake was observed in the analyzed periods. Increasing folic acid levels increased quadractlyaverage daily weight gain and affected feed:gain ratio only from 21 to 35 days. Hematocrit, hemoglobin and red blood cell values increased linearly with increasing folic acid levels.Serum folate values decreased as dietary folic acid levels increased. Diets with formic acid for piglets from 21 to 48 days old should be supplemented with 0.64 mg of folic acid per kg of diet.Key Words: acidifier, serum folate, hematocrit, hemogram, hemoglobin, performance IntroduçãoO desmame e os dias subseqüentes têm constituído, do ponto de vista nutricional, um período crítico no desenvolvimento de leitões. Para minimizar seus efeitos negativos, os nutricionistas têm utilizado aditivos, como os acidificantes, entre os quais destaca-se o ácido fórmico, um ácido orgânico utilizado com os objetivos de reduzir o pH do trato digestivo, aumentar a ação da pepsina, reduzir a taxa de esvaziamento do estômago, aumentar a digestão de peptídeos e reduzir a proliferação de patógenos (Lima, 1999).
RESUMO -Dois experimentos foram conduzidos com o objetivo de avaliar o efeito da inclusão de níveis crescentes (1,5; 3,0; 4,5 e 6,0%) de óleo de soja (OS) ou gordura animal (gordura de porco -GA) nas dietas sobre a digestibilidade aparente dos nutrientes e o desempenho de coelhos em crescimento. No ensaio de digestibilidade, foram utilizados 72 coelhos da raça NZB, distribuídos em um delineamento inteiramente casualizado, com nove tratamentos e oito repetições. A adição de diferentes níveis de OS ou GA às dietas não influenciou os coeficientes de digestibilidade de MS, MO, PB e EB e a ingestão de MS, mas provocou efeito positivo sobre a digestibilidade do EE e da FDN. Não foi observado efeito da inclusão de OS ou GA sobre a contribuição nutritiva de cecotrofos ou sobre a MS e PB, mas a inclusão de 3 e 6% de GA aumentou a contribuição nutritiva do EE. No experimento de desempenho, foram utilizados 45 coelhos NZB distribuídos em um delineamento inteiramente casualizado, com nove tratamentos e cinco repetições. Os animais foram alojados logo após o desmame em gaiolas individuais, onde foram controlados o consumo de ração e o ganho de peso até os 77 dias de idade. Os tratamentos não afetaram significativamente o peso final, o ganho de peso diário, a conversão alimentar, os pesos de carcaça, pele, rins e intestino, mas influenciaram negativamente o consumo médio diário e os pesos de fígado e coração.Palavras-chave: gordura animal, órgãos digestivos, óleo de soja Effects of feeding increasing levels of vegetable oil or animal fat on digestibility, cecotrophy, performance and carcass yield of growing rabbits ABSTRACT -Two assays were conducted to evaluate the effects of feeding increasing dietary levels (1.5, 3.0, 4.5, and 6%) of soybean oil (SO) or animal fat (pork lard -AF) on nutrient apparent digestibility and performance for growing rabbits. In the digestibility assay, 72 NZB rabbits were assigned to a completely randomized design with nine treatments and eight replicates. No treatment effect on the coefficients of digestibility of DM, OM, CP GE or the DM ingestion was observed, however it was observed positive effect on EE and NDF digestibilities. No effect of increasing dietary levels of SO or AF on cecotrophe nutritional contribution or DM and CP was observed, but the addition of 3 and 6% AF increased EE nutritional contribution. In the performance assay, 45 rabbits NZB were assigned to a completely randomized design with nine treatments and five replicates. The animals were individually caged immediately after weaning, where feed intake and weight gain were controlled up to 77 days old. No significant treatment effect on final weight, daily weight gain, feed: gain ratio and weights of carcass, leather, kidneys or intestine was observed. It was observed negative effect on daily feed intake and weights of liver and heart.
RESUMO -O objetivo neste estudo foi avaliar os efeitos da ractopamina e da enzima fitase sobre o desempenho e as características de carcaça de suínos na fase de terminação. Foram utilizados 354 suínos machos castrados do tipo comercial, de mesma origem e com peso inicial de 94,1 ± 5,7 kg, distribuídos em delineamento experimental de blocos ao acaso, com seis tratamentos e cinco repetições. A unidade experimental continha 11 ou 12 animais. Como tratamentos, avaliaram-se as seguintes dietas: controle, formulada com base na tabela de necessidades nutricionais; dieta A, controle com ajuste nutricional para uso de ractopamina; dieta A com fitase; dieta A com ractopamina; dieta A com ractopamina e fitase; e dieta A com ractopamina e fitase com parte das exigências de cálcio e fósforo disponível atendida pela enzima. O experimento durou 21 dias e ao final os animais foram abatidos para avaliação de carcaças. Os resultados foram comparados por contrastes ortogonais.O consumo de ração não foi influenciado pelas dietas. A dieta com níveis proteico e aminoacídico ajustados e sem ractopamina não melhorou o desempenho dos animais em comparação à dieta controle. A ractopamina teve efeito no ganho de peso e na conversão alimentar ao final do período de 21 dias, além do peso pré-abate, peso de carcaça quente, rendimento de carcaça, carne magra total e índice de bonificação. A inclusão de fitase em dietas contendo ractopamina de forma a fornecer cálcio e fósforo disponível acima das exigências de suínos em terminação não alterou o ganho de peso, a conversão alimentar e as características de carcaça. A ractopamina melhora o desempenho e as características de carcaça. RESUMO -O experimento foi conduzido com objetivo de avaliar o efeito da utilização de ractopamina e fitase em dietas para suínos no período final de terminação sobre o desempenho, as características de carcaça e a composição mineral no osso terceiro metacarpo. Foram utilizados 240 suínos machos castrados com peso inicial de 100,7 ± 3,9 kg, em delineamento de blocos ao acaso, em arranjo fatorial 2 × 3, com dois níveis de ractopamina (5 ppm e 10 ppm) e três de fitase (0, 500 e 750 uf), totalizando seis dietas, avaliadas em cinco repetições de oito animais por unidade experimental. O experimento teve duração de três semanas e, ao final, os animais foram abatidos para avaliação de carcaça. Não houve interação entre os níveis de ractopamina e fitase para nenhuma das variáveis. O peso corporal, o consumo diário de ração, a perda de peso durante o transporte, o percentual de carne magra e os teores de cinzas, fósforo e flúor no osso não foram influenciados pelas dietas. O nível de 10 ppm de ractopamina foi o que promoveu melhores resultados de ganho de peso, conversão alimentar, peso de carcaça quente, carne magra total, índice de bonificação e teor de cálcio no osso. Os níveis de fitase avaliados não influenciaram o desempenho nem as características de carcaça, exceto o rendimento, que foi maior nos animais alimentados com a dieta contendo 500 uf em comparação àqueles que não receberam fitase. Dietas com 10 ppm de ractopamina proporcionam melhor desempenho e características de carcaça em comparação a dietas com 5 ppm. A substituição de fonte inorgânica por fitase (500 ou 750 uf) na dieta não influencia o desempenho, as características de carcaça nem a composição mineral no osso de suínos alimentados com dietas contendo ractopamina.Palavras-chave: aditivos, β-adrenérgico, carcaça, enzima, fitato, osso Performance, carcass characteristics and bone composition of swines fed different levels of ractopamine and phytase ABSTRACT -The experiment was carried out aiming at evaluate the effect of using ractopamine and phytase in diets for swines at the end of the finishing period on performance, carcass characteristics and mineral composition on the third metacarpus bone. It was used 240 barrows with initial weight 100.7 ± 3.9 kg in a random block design, in a 2 × 3 factorial arrangement, with two levels of ractopamine (5 ppm and 10 ppm) and three levels of phytase (0, 500, and 750 FTU) totalizing six diets evaluated in five replications of eight animals per experimental unit. The experiment was conducted for three weeks and, at the end, the animals were slaughtered for carcass evaluation. There was no interaction among the levels of ractopamine and phytase for any of the variables. Body weight, ration daily intake, farm to slaughter shrink, percentage of fat-free lean and contents of ash, phosphorus and fluoride in the bone were not influenced by the diets.
