Bu araştırmada İzmir (kıyısal bölge), Adana (karma bölge) ve Ankara (karasal bölge) illerinde ikamet eden tüketicilerin güncel su ürünleri tüketim deseni, tüketici profili, su ürünleri tüketimi miktarı ve sıklığını olumsuz yönde etkileyen faktörler araştırılarak, ileriye yönelik sektörel girişimlerin yönlendirilmesi, tüketici alışkanlıkları üzerine daha kapsamlı araştırmalar yapılması için araştırmacılara ve ilgili kurum ve kuruluşlara kaynak sunulması amaçlanmıştır. Bu kapsamda gayeli olarak 3 gruba ayrılan ana kitle, farklı coğrafya bölgelerinden denize uzaklığı ve bölge içi nüfus kriterlerine göre belirlenmiş ve 3 ilin nüfusları dikkate alınarak belirlenen 400 adet anketin % 43' ü Ankara, % 36' sı İzmir, % 21'i Adana ilinde tüketicilerle yüz yüze görüşülerek gerçekleştirilmiştir. Anket sonuçlarına göre katılanların %6'sının hiç su ürünleri tüketmediği, %25'inin ayda bir, %28' inin iki haftada bir, %42'sinin ise haftada bir ve daha fazla su ürünleri tükettiği tespit edilmiştir. En sık su ürünleri tüketimi kıyısal bölge olan İzmir'de tespit edilmiştir. Tüm bölgelerdeki tüketicilerin % 90' ı su ürünlerini öncelikle taze olarak tüketmeyi tercih etmektedirler. Ankete katılan tüm tüketicilerin cevaplarına göre su ürünleri tüketim tercih ve alışkanlıklarını olumsuz yönde etkileyen başlıca 4 etken "yüksek fiyat, pazarda kolaylıkla bulunamaması, su ürünleri çeşitlerinin tanınmaması ve lezzetinin beğenilmemesi" olduğu saptanmıştır. Tüketicilerin öğrenim düzeyi ile su ürünleri tüketim sıklığı değişkenleri arasındaki ilişki doğrusal yönlü ve kuvvetli olup su ürünleri tüketim sıklığı ile tüketici yaşı değişkenleri arasındaki ilişki ters yönlüdür. Su ürünleri tüketim tercihini olumlu yönde etkileyen etkenler konusunda tüketicilerin %71 'i sağlığa olumlu etkilerini ve lezzetini en önemli tercih nedeni olarak belirtmişlerdir. Tüketicilerin su ürünleri tüketimi eğilimi ile sağlığa olumlu etkileri faktörleri arasındaki ilişki doğrusal ve kuvvetlidir.
