Este trabalho teve como objetivo elaborar uma massa alimentícia fresca a partir de farinhade banana da terra verde in natura (Musa sapientum) e farinha de aveia (Avena sativa), isentas de glúten em diferentes formulações. A polpa de banana da terra verde in natura foi submetida a um processo de secagem em estufa de circulação de ar forçado em temperatura de 80 ºC. Para cada tipo de farinha de banana obtida foram configuradas três formulações de massa fresca que se diferenciam nas proporções de farinha de banana daterra verde e farinha de aveia: Formulação 1 (75% de farinha de banana da terra verde +25% de farinha de aveia); Formulação 2 (50% de farinha de banana da terra verde + 50% de farinha de aveia); Formulação 3 (25% de farinha de banana da terra verde + 75% de farinha de aveia). Foram realizadas análises físico-químicas, de qualidade tecnológica e de qualidade microbiológica As análises físico-químicas avaliaram os teores de umidade,cinzas, pH, acidez titulável e proteínas. As análises de qualidade tecnológica verificaram o tempo de cozimento, aumento de massa e perda de sólido, por fim, as análises microbiológicas mediram coliformes totais, coliformes termotolerantes e bolores eleveduras. Os resultados obtidos mostram que o processo de secagem realizado se ajustou ao modelo matemático proposto por Henderson e Pabis. As formulações apresentaram um teor de umidade médio de 45,82%, acidez 1,007%, proteínas 4,84%,cinzas 1,95%, lipídeos 4,3% e pH de 5,77. Nas análises tecnológicas, todas as formulações avaliadas resultaram em uma massa alimentícia de alta qualidade tecnológica. De modo geral, levando em consideração todos os parâmetros analisados, conclui-se que a elaboração de massas a partir das farinhas de banana da terra verde e aveia é promissora, especialmente, para a formulação 3, que apresentou maior teor proteico e menor tempo de cozimento.
