ResumenEl objetivo de este trabajo fue evaluar la textura del plátano Pelipita (Musa ABB) crudo y cocido en comparación con plátanos crudos y cocidos Hartón verde (Musa AAB) y Topocho (Musa ABB del subgrupo Silver Bluggoe) mediante un análisis de perfil de textura. El estudio de la textura como propiedad física del alimento es de suma importancia para determinar la aceptabilidad del mismo. A muestras de plátanos Pelipita de la variedad Musa ABB se les aplicó un análisis del perfil de textura a tiempos de cocción de 20, 30, 40 y 50 minutos a 100 °C. El porcentaje de humedad del plátano Pelipita es menor en comparación con el plátano Hartón y Topocho. El análisis de perfil de textura mostró que al final del tiempo de cocción el plátano Pelipita resultó más duro.

Texture Profile Analysis in Bananas Pelipita, Hartón and Topocho AbstractThe aim of this study was to evaluate the texture of raw and cooked Pelipita banana (Musa ABB) and compare it with that of raw and cooked green bananas Hartón (Musa AAB) and Topocho (Musa ABB subgroup Bluggoe Silver) by texture profile analysis. Texture, as a physical property of a given food is extremely important to determine its acceptability. Samples of Pelipita bananas of the variety Musa ABB were subjected to texture profile analysis at cooking times of 20, 30, 40 and 50 minutes at 100 °C. The moisture content of banana Pelipita is lower than that of Hartón and Topocho bananas. The texture profile analysis showed that at the end of the cooking time Pelipita banana resulted to be harder.
En el espacio áulico universitario, ha prevalecido la enseñanza de contenidosdisciplinares con escasa consideración de las emociones generadas. Nos propusimosidentificar, en estudiantes del Profesorado en Ciencias Biológicas, cuáles son lasemociones que les generan las distintas estrategias pedagógicas propuestas en dosasignaturas correlativas referidas a salud humana y analizar las respuestas en unespacio de diálogo. Se aplicó una encuesta al finalizar cada asignatura, en la que selistaban las emociones clasificadas en positivas y negativas.Los estudiantes refirieron una mayor frecuencia de emociones positivas ante las clasesdictadas por el docente. Las actividades que implicaron más participación de losestudiantes generaron el mayor número de emociones negativas. Estos futuros profesoresde nivel medio refirieron que nunca habían sido consultados ni habían analizadosus emociones con anterioridad. La mayoría valoró las estrategias didácticas utilizadasya que consideran que los colocaron en un rol participativo y que favorecieron su formaciónprofesional.Palabras clave: emoción, educación científica, formación de profesores, universidad.
El grupo de docentes de la cátedra de bioquímica del Departamento de Ciencias Básicas de la Facultad de Ciencias Naturales e Ingeniería de la Universidad de Bogotá Jorge Tadeo Lozano, presenta a la comunidad universitaria un material didáctico para los alumnos que cursan el espacio académico de Bioquímica. El objetivo de este grupo de ejercicios es formar parte del trabajo continuado en pro del mejoramiento permanente de la calidad, en el proceso de aprendizaje de los estudiantes como apoyo al trabajo independiente. La primera entrega se enfocó en la bioquímica estructural y descriptiva de las principales biomoléculas; en esta segunda parte se abordan los principios básicos de las interacciones y transformaciones entre ellas, que permiten obtener energía a los seres vivos. Se trata principalmente del metabolismo humano, y aunque ocasionalmente se abordan estrategias metabólicas propias de otras especies, se hace especial énfasis en las rutas de las tres fases del metabolismo intermediario aerobio, tanto catabólico como anabólico, y los capítulos de bioenergética se complementan con los de la bioquímica estructural de lípidos y carbohidratos de importancia biológica o en las industrias: alimentaria, farmacéutica y cosmética.
