RESUMO A quantidade e a qualidade da água potável ingerida estão diretamente relacionadas com a saúde humana. A garantia de segurança e potabilidade depende do funcionamento adequado de etapas que vão desde o tratamento até a distribuição; e, caso alguma delas apresente falhas, pode haver processo de contaminação. Partindo desse pressuposto, objetivou-se com o presente trabalho verificar a qualidade microbiológica da água fornecida em bebedouros de escolas públicas e privadas de ensino fundamental e infantil da cidade de Santa Rita, na Paraíba. As análises de coliformes totais, termotolerantes e bactérias heterotróficas foram realizadas segundo os padrões e metodologias da American Public Health Association. Por meio dos resultados deste trabalho, baseados nos padrões contidos na Portaria nº 2.914, de 12 de dezembro de 2011, do Ministério da Saúde, em relação à contagem de coliformes totais, verificou-se que 100% das amostras apresentavam-se impróprias para consumo, enquanto coliformes termotolerantes foram detectados em 33,33% das amostras). A contagem de bactérias heterotróficas variou entre 1,5x102 e 1,6x103 UFC.mL-1, sendo assim, todas as amostras foram consideradas impróprias ao consumo humano. Sugere-se um rigoroso controle de qualidade e a adoção de boas práticas, tais como tratamento da água, limpezas periódicas e manutenção dos reservatórios, filtros e bebedouros, bem como medidas preventivas e corretivas para manutenção da higiene e do controle microbiológico dos reservatórios de água, de forma a ser disponibilizada água com qualidade.

This work undertook an analysis of a territorial, political and economic cut, which we call the Region of Carajás, that is, where the largest mining projects of the Vale company are concentrated in the Southeast region of the state of Pará. The mineral province of Carajásis also considered, due to the effects of the mining activities; making it possible to carry out this cut in the municipalities (Parauapebas, Canaã dos Carajás, Marabá, Ourilândia do Norte, São Felix do Xingu and Curionópolis) where the largest Vale projects are concentrated, mainly from the first half of the twenty-first century. To this end, a geographic reading of the territorial transformations in Carajás and the reorganization of the territory were carried out, to think about the regional development articulated on different scales, provided by the mining activities in the state of Pará.

Pitaya and acerola are fruits rich in nutrients and can be used in blends formulation in order to improve the sensory characteristics of both pulps in isolation and complement each other in terms of nutritional aspects. Thus, the aim of this research was to develop different blends of pitaya pulp with acerola and choose the best formulation based on physical-chemical and colorimetric characteristics. Three blends formulations were prepared: F1-90% pitaya and 10% acerola; F2-70% pitaya and 30% acerola; and F3-50% pitaya and 50% acerola. The formulations were evaluated for physical-chemical parameters of water activity, water content, ash, total soluble solids (SST), pH, total titratable acidity (ATT), SST/ATT ratio, ascorbic acid, proteins, lipids, sugars totals, reducers and non-reducers and colorimetric analysis. The obtained data were subjected to variance analysis (ANOVA) and to comparison between means by the Tukey test at 5% probability. The formulation F1 stood out when compared to the others. The parameters pH, soluble solids, ratio SS/ATT, ash, water content, water activity, proteins, sugars, luminosity and hue angle were the ones that gave the formulation F1 the best results. However, it is noteworthy that the formulation F3 presented a greater amount of ascorbic acid and higher values of a, b and chroma in the colorimetric analysis. The use of these fruits allows to obtain an innovative product with excellent nutritional and functional characteristics. The blend is a viable alternative for the use of perishable and seasonal fruits, adding greater economic value to the very promising product to the market.

The flours of germinated pumpkin seeds of Crown, Jacarezinho, and Italian varieties were evaluated. The flours showed a predominance of yellow intensity, high content of minerals, and total phenolic compounds with important in vitro antioxidant potential. There was a predominance of flavonoids (myricetin, procyanidin B2, and procyanidin B1). The degradation of phenolic compounds was satisfactorily predicted by zero‐order (Crown and Italian) and first‐order (Jacarezinho) equations. The flours were considered non‐toxic, with morphologically irregular particles and predominance of amorphous characteristics. The FTIR spectra showed the bands of the main components, indicating the presence of starch, lipids, and proteins. The thermal properties showed distinct gelatinization peaks between the flours, while the TGA and DTG curves showed greater mass loss during the carbonization of the material in the three flours. The flours studied have some distinct characteristics, with great potential for use in various formulations and preparations of functional foods. Novelty impact statement Germinated pumpkin seed flours have high content of minerals, total phenolic compounds, antioxidant activity, concentration of crude fiber, and flavanoids. As for morphology, they showed a predominance of amorphous characteristics. The FTIR spectra showed the presence of starch, lipids, and proteins in the flours. Thus, germination followed by convective drying for the production of pumpkin seed flours proved to be effective and sustainable to make new flour options available on the market that can contribute to improving the nutritional and functional profile of foods.
