Unter den untersuchten Nahrungs-Konservierungsmitteln w a r Hexamethylentetramin a m wirksamsten und Borsaure a m wenigsten wirksam gegeniiber den in dieser Arbeit studierten Bakterien des Fischverderbs. Benzoesaure u n d Benzoat sind von jeher beliebte Mittel gewesen, uni bakteriellen Verderb von Nahrungsmitteln zu verhindern. Die Einfuhrung substituierter Gruppen in Para-Stellung in das Molekiil erhohte die bakteriostatische W i r k u n g der Benzoesaure. Deshalb werden die Ester der p-Hydroxybenzoesaure in steigendem Mai3e als Konservierungsmittel verwendet. Propyl-und Methylester der p-Hydroxybenzoesaure wurden in dieser Untersuchung gleichfalls bei p H 7.0 fur wirksamer befunden als Benzoesaure oder Natriumbenzoat. I m Gegensatz hierzu w a r die Reihenfolge ihrer bakteriostatischen Wirksamkeit bei einem pH von etwa 5.5 wie folgt: Propylester, Natriumbenzoat, Benzoesaure u n d Methylester. Diese Veranderung der Reihenfolge hei zunehmendem Sauregrad erklart sich aus der Tatsache, dai3 die Ester der p-Hydroxybenzoesaure in gleicher Weise wirksam gegen Bakterienverderb in Sauren oder neutralen Losungen im pH-Bereich 5.5 u n d 7.0 sind, aber Benzoesaure u n d Benzoate sich in stark saurer Losung viel wirksamer als im neutralen Medium erweisen. Dies wird dadurch bedingt, dai3 n u r undissoziierte Benzoesaure bakteriostatisch wirkt. Starke Wirkung undissoziierter Sauren, verglichen mit der ihrer Ionen, kann durch die Annahme erklart werden, dai3 die undissoziierten Molekiile imstande sind, viel s h e l l e r durch die Membranen u n d das Protoplasma zu wandern als ihre Ionen. D e r Sauregrad des Mediums ist also sehr wichtig, wenn Benzoesaure oder Benzoate als Konservierungsmittel benutzt werden. Zit sarninen fassung Die Kultur-Eigenschaften von 19 aus verschiedenen Arten verdorbener Heringspraserven isolierten Stammen wurden untersucht. Die Organismen wurden klassifiziert auf Grund der Angaben in Bergey's Manual. Es wurden so die folgenden Genera in der Reihenfolge der Haufigkeit ihres Vorkommens gefunden: Micrococcus, Sarctna. Achromobacter, Flavobacte-1 i i r m und Corynebncterium. Die meisten Stamme konnten ziemlich genau identifiziert werden. Die aus Heringspraserven isolierten Stamme haben einen weiten Bereich der Salz-Toleranz, der z. T. durch Anpassung wahrend lingerer Lagerzeit erklart werden kann. Die meisten Stamme gediehen noch in Kochsalz-Konzentrationen bis zu 15 O / o . Die bakteriostatischen Studien haben ergeben, dad Hexamethylentetramin, Propyl-und Methylester der p-Hydroxybenzoesaure, Natriumbenzoat, Benzoesaure und Borsaure bei pH 7.0 in der erwahnten Reihenfolge gegen die genannten Pakterien wirksam sind. Wird der Sauregrad des Mediums stark erhoht, so steigert sich auch die Wirksamkeit von Benzoesaure und Natriumbenzoat.
