“…Generally, enzymatic hydrolysis is preferable for XOS production as it requires mild operating conditions and does not produce degradation products or high amounts of monosaccharides. However, despite the larger production of undesirable byproducts, acid hydrolysis exhibits simpler and faster kinetics, hence higher efficiency, being frequently used. , Furthermore, knowing the reaction kinetics, the production of monosaccharides and degradation products can be minimized by adjusting the operating conditions which, unlike for the enzymatic hydrolysis, can also be optimized to control the production of desired DPs of XOS.…”
