Black tea is a fully fermented tea produced in a wide range of areas, including China, India, Sri Lanka, Kenya and Indonesia, and its health benefits and pleasant flavour make it popular. 1,2 Hehong tea was a famous traditional Congou black tea in China, created by Chinese tea farmers in the Ming Dynasty (1426-1521). 3 As a black tea produced from Hekou Town, Yanshan County, Shangrao City, Jiangxi Province, namely, Hehong tea, since its creation has been favoured worldwide.Its quality is traditionally characterized by the black bloom of dry tea, with red and brilliant of infusion colour, a strong and lasting sweet aroma, with a mellow and thick taste with sweet aftertaste. 4 Hehong tea can be divided into different types, including Gongya (GY), Congou (CG) and Laocong (LC) tea. 4 Consumers choose Hehong tea
