Vomitoxin

Abstract: Vomitoxin or deoxynivalenol (DON) is one of the tricothecenes (mycotoxins) which comprise a large group of protein synthesis inhibitors. These mycotoxins are also powerful immunosuppressants which may predispose animals to other disease. “…At the higher temperature, a more rapid aggregation and precipitation of the 7s protein may occur and reduce water retention; whereas at temperatures below 70°C the smaller proteins may have limited denaturation and are able to move more freely and so not be incorporated in the tofu. The coagulation temperature used in the traditional method is 75430°C (Shurtleff & Aoyagi, 1979) probably evolved from consideration of the quality since greater yields are obtained at lower temperatures.…”
