Valeur nutrition/santé de quelques espèces de Légumineuses alimentaires mineures au Togo

Abstract: Cette étude sur les plantes alimentaires mineures du Togo a montré que des « variétés locales » sont riches en substances d'intérêt nutritionnel et sanitaire. Sur la base d'une méthodologie précise, il a été montré que :-les graines de variétés locales de Cajanus cajan sont les plus riches en protéines (206,55 ± 0,03 à 220,17 ± 0,09 mg/g) alors que les plus faibles valeurs ont été trouvées pour Macrotyloma geocarpum (155,7 ± 0,07 à 172,9 ± 0,18 mg/g) ; les masses moléculaires des sous-unités sont comprises ent… Show more
