Uji Stabilitas Pigmen Merah Antosianin Dari Daun Jati Muda (Tectona grandis Linn f) terhadap pH sebagai Pewarna Alami

Abstract: ABSTRAK Penelitian ini adalah penelitian eksplorasi yang bertujuan untuk mengetahui kestabilan pigmen merah antosianin dari daun jati muda (Tectona grandis Linn f) terhadap pH. Daun jati muda diperoleh dari perkebunan jati Dusun Bera, Desa Laringgi, Kec. Marioriawa Kab.Soppeng.
