Turmeric.

Abstract: This chapter covers the morphology, uses, chemical composition (volatile compounds, curcuminoids, polysaccharides and oleoresin) and medicinal properties (including antiinflammatory, antioxidant, antimutagenic, antineoplastic, antimicrobial and hypoglycaemic activities) of turmeric (Curcuma longa).
