The role of urea on the dissolution of starch in NaOH–urea aqueous solutions

Abstract: Kamlet-Taft solvation parameter analysis unveiled starch-urea molecular interactions; heat released during urea hydrate formation promoted starch dissolution and urea inhibited retrogradation and degradation of starch via electrostatic repulsion and hydrophobic effects.
