В настоящее время все большее внимание уделяется решению вопросов, связанных с увеличением производства говядины, поскольку это наиболее востребованный вид мяса среди красных видов. Получены новые данные о качественных показателях молока от телок современного голштинизированного черно-пестрого скота. Установлено, что высокие показатели убойного выхода зафиксированы при убое в 24-месячном возрасте – 52,3 %. Оценка морфологического состава туши показала, что с возрастом масса туши как в парном, так и в охлажденном виде увеличивается. При этом с возрастом разница между массой парной и охлажденной тушей снижается с 6,8 (18 месяцев) до 2,8 % (24 месяца). В 27 месяцев эта разница увеличилась до 3,1 %. Выход мякоти у телок был в пределах 76,8–79,6 %, возрастая при увеличении возраста телок при убое. Разница по массе мякоти, костей, сухожилий и выходу мякоти на 100 кг живой массы достоверно в пользу телок при убое в возрасте 24 и 27 месяцев, относительно более ранних сроков убоя в 18 и 21 месяц при Р ≤ 0,05. Коэффициент мясности выше был при убое телок в возрасте 27 месяцев – 4,63 кг. Это выше на 0,32–0,53 кг, чем в другие возрастные периоды. С возрастом в мясе телочек снижается содержание влаги с 69,9±0,50 % до 66,8±0,25 % и повышается содержание сухого вещества с 30,1±0,26 % до 33,2±0,26 %. Параллельно этому идет незначительное повышение содержания белка и жира в сухом веществе. Таким образом, возраст животного оказывает влияние на убойные качества, морфологический и химический состав мяса. С увеличением возраста животных повышается питательная и энергетическая ценность мяса. Наиболее эффективно выращивать сверхремонтных телок голштинизированного черно-пестрого скота на мясо до возраста 24 месяцев.
