The Characteristics of Volatile Compounds of Kenari (Canarium indicum L.) Shell Liquid Smoke

Abstract: Kenari (Canarium indicum L.) shell is a potential raw material for liquid smoke. The quality of liquid smoke depends on the volatile compounds of it. This study was aimed to qualify the volatile properties of Kenari (Canarium indicum L.) shell liquid smoke.
