Campylobacter spp. are the leading global cause of bacterial colon infections in humans. Enteropathogens are subjected to several stress conditions in the host colon, food complexes, and the environment. Species of the genus Campylobacter, in collective interactions with certain enteropathogens, can manage and survive such stress conditions. The stress-adaptation mechanisms of Campylobacter spp. diverge from other enteropathogenic bacteria, such as Escherichia coli, Salmonella enterica serovar Typhi, S. enterica ser. Paratyphi, S. enterica ser. Typhimurium, and species of the genera Klebsiella and Shigella. This review summarizes the different mechanisms of various stress-adaptive factors on the basis of species diversity in Campylobacter, including their response to various stress conditions that enhance their ability to survive on different types of food and in adverse environmental conditions. Understanding how these stress adaptation mechanisms in Campylobacter, and other enteric bacteria, are used to overcome various challenging environments facilitates the fight against resistance mechanisms in Campylobacter spp., and aids the development of novel therapeutics to control Campylobacter in both veterinary and human populations.

Для оценки эффективности влияния на патогенную микрофлору различных антимикробных воздействий проведено сравнительное изучение чувствительности тест-штаммов Campylobacter jejuni к УФ-излучению и биоцидам на основе надуксусной кислоты (НУК). Биоциды на основе НУК подавляли значительное число кампилобактеров, однако заданные режимы обработки не обеспечивали полной инактивации тест-штаммов. Эффективность воздействия УФ-облучения на штаммы C. jejuni находилась в зависимости от продолжительности экспозиции: после 20 мин обработки планшетов с бульонными бактериальными суспензиями число жизнеспособных клеток снижалось на 1,5-2,0 логарифмических порядка, через 60 мин содержание C. jejuni снижалось и составляло менее 200 КОЕ/см 3. Антибиотические вещества полипептидной природы, продуцируемые молочнокислыми бактериями (бактериоцины, низин и др.), обладают комплексом полезных признаков, чем обусловлена возможность их использования для подавления вредной микрофлоры в производстве пищевых продуктов. Используя модель «ассоциативного роста», проведено изучение особенностей размножения C. jejuni в молоке, которое инокулировали одновременно с этим патогеном мезофильными молочнокислыми лактококками или термофильными лактобактериями-продуцентами бактериоцинов. В зависимости от количества внесенных молочнокислых бактерий Lactobacillus plantarum, Lactobacillus lactis и Lactococcus lactis размножение C. jejuni заметно ингибировалось. Установлена зависимость антибактериальной активности и характера ингибирующего действия от концентрации вышеназванных видов молочнокислых микроорганизмов, температуры и продолжительности культивирования смешанных культур, свойств используемых штаммов, которые в наибольшей степени проявлялись при внесении лактобактерий в дозе 10 8 КОЕ/см 3. Изучение способности C. jejuni выживать при неблагоприятных воздействиях внешней среды показало вариабельность физиологических свойств микробных популяций, высокую степень резистентности бактерий рода Campylobacter и связанные с ними трудности адекватного подбора эффективных средств и способов антимикробной обработки.

This study was designed and conducted to evaluate the frequency, antimicrobial resistance, and presence of six virulence-associated genes among thermophilic Campylobacters isolated from raw milk, poultry (chicken, turkey, and duck), fish, cattle, and sheep meat. Out of 590 samples, which were recovered from different origins, 141 (23.9%) samples were positive for Campylobacters. Campylobacter spp. was isolated in 40.8% (106/260), 14% (28/200), and 8.7% (7/80) of poultry meat, red meat, and milk samples, respectively. Antimicrobial susceptibility test indicated a high frequency of resistance to ciprofloxacin, tetracycline, and nalidixic acid among the isolates. Furthermore, prevalence of waaC, ciaB, and pldA genes were 91.7%, 86.7%, and 80.8%, respectively; and, none of the isolates harbored both wlaN and cgtB genes, simultaneously. Moreover, there was a weak correlation between antibiotics resistance and presence of the pathogen genes. However, the existence of Campylobacter spp. isolates in food animal products, with high resistance to antibiotics and several virulence gene possessions, is alarming and increases the attention to the widespread use of antibiotics.
