Technological Strategies for the Development of Egg-Derived Products with Reduced Content of Cholesterol

Abstract: Four different strategies were employed to obtain egg-derived products in form of sticks with a reduced cholesterol content (use of β-cyclodextrins, extraction of egg-yolk granules, bioconversion of cholesterol by cholesterol oxidase, and use of chitosan as a chelating agent). The developed products were analyzed and compared to conventional egg-derived products for their proximate composition, cholesterol content, color, and consumer acceptability. Additionally, the lipid oxidation and surface color stability… Show more

“…However, the results obtained in this study showed that adding chitosan with TQI C-6000 did not increase the antimicrobial activity of this product in food. However, their other functions such as antioxidant activity recommend their use in food [ 28 ]. Other studies carried out in fish and beef patties have also observed decreases in bacterial count when sodium acetate was used [ 29 , 30 ].…”

“…Chitosan has been demonstrated to inhibit pancreatic lipase activity and bind to bile acids, resulting in reduced intestinal fat absorption and increased excretion of fecal fat. At the cellular level, chitosan can suppress adipocyte differentiation, triglyceride accumulation and expression of adipogenic markers, and has also demonstrated an increased ability to remove excess cholesterol and bile acids from tissues and carry them to the liver for excretion [52]. This is important considering that bile acids are potentially toxic [53].…”

“…This is important considering that bile acids are potentially toxic [53]. In addition, the conversion of cholesterol to bile acids and their subsequent secretion into the bile is an important pathway for the elimination of cholesterol from the body [52]. Intervention with chitosan has been found to result in the lowest levels of total unsaturated fatty acids in fecal fats.…”

“…Moreover, cholesterol content is used in the evaluation of egg quality in the poultry industry. From the perspective of human health, eggs with lower cholesterol are considered to have superior quality, and more attention is currently paid to reducing egg cholesterol (35, 36). In this study, compared to the control, the groups with lower amount of additive showed a decrease in the yolk cholesterol content, but there were no effects on the triglycerides.…”
