A B S T R A C T Pigmented Rice (PR) is one of the valuable food crops used in indigenous medicine.Thirteen PR varieties were collected from 3 climatic zones of South Sulawesi, Indonesia and analyzed for grain dimension, color and proximate composition. The PR were extracted using acidic ethanol and then measured their total phenolics, anthocyanins and 2,2-diphenyl-1-picrylhydrazyl (DPPH) scavenging activity. Grain size determination showed that the length of the rice was in the range of 5.60-6.82. There was no significant different (p>0.05) in rice length and length/width ratio. The colorimetric results indicated that the darkest black glutinous rice had the lowest brightness parameter L* value which was negatively correlated with its total anthocyanin (r = -0.673) and phenolic (r = -0.559) contents. Proximate analysis results showed that all of PR varieties fulfilled the water content limit (#14%). The total contents of ash, fat, protein, crude fiber and carbohydrate were in the range of 1. 19-2.13, 1.06-3.05, 7.24-14.02, 0.66-0.99 and 71.29-77.14%, respectively. The anthocyanin and phenolic contents of black glutinous rice extracts were in the range of 94.70-202.46 mg Cy-3-glc/100 g db and 292.74-746.25 mg GAE/100 g db, respectively, which were higher than the black rice (66.08-113.83 mg Cy-3-glc/100 g db and 119.74-230.10 mg GAE /100 g db) and the red rice (0-12.85 mg Cy-3-glc/100 g db and 12.52-64.52 mg GAE/100 g db). Antioxidant activity was positively correlated with total phenolic (r = 0.886) and anthocyanin (r = 0.650) compounds. The data suggests the potency of black glutinous rice as a part of nutraceutical product formulation.

Abstract:In order to investigate the antioxidant properties of the polysaccharides from the brown alga Sargassum fusiforme, the crude polysaccharides from S. fusiforme (SFPS) were extracted in hot water, and the lipid peroxidation inhibition assay exhibited that SFPS possessed a potential antioxidant activity. Hence, two purely polymeric fractions, SFPS-1 and SFPS-2 were isolated by the column of DEAE (2-diethylaminoethanol)-Sepharose Fast Flow, with their molecular weights of 51.4 and 30.3 kDa determined by high performance gel permeation chromatography (HPGPC). They were preliminarily characterized using chemical analysis in combination of infrared (IR) and nuclear magnetic resonance (NMR) spectroscopies and found to contain large amounts of uronic acids and β-glycosidical linkages. The antioxidant activities of these two SFPS fractions were evaluated using superoxide and hydroxyl radical-scavenging assays. The results show that the antioxidant ability of SFPS-2 was higher than that of SFPS-1, probably correlating with the molecular weight and uronic acid content.

Objetivo. Determinar el efecto protector del extracto acuoso de las vainas de tara Caesalpinia spinosa (Molina) Kuntze, en la mucosa gástrica de animales de experimentación. Diseño. Experimental. Institución. Centro de Investigación de Bioquímica y Nutrición, Facultad de Medicina, Universidad Nacional Mayor de San Marcos, Lima, Perú. Material biológico. Extracto acuoso de las vainas de tara (EAVT) y 36 ratas albinas macho (217g ± 22 g). Intervenciones. Las ratas albinas previo ayuno de 24 h fueron divididas en 6 grupos: GI y GII, NaCl 0,9% a 20 mL/kg; GIII, GIV y GV, EAVT en dosis de 100, 400 y 800 mg/kg, respectivamente; y, GVI hidroflat 500 mg/kg. Una hora después, se provocó la injuria gástrica con etanol 70° para luego realizar la gastrectomía. Principales medidas de resultados. Porcentaje de protección de la mucosa, empleando el software ImageJ 1.48v, y para la actividad antioxidante el método 2,2-difenil-1-picrilhidracil (DPPH). Resultados. El EAVT presentó compuestos fenólicos y taninos en mayor cantidad. Exhibió alta actividad antioxidante (IC50 = 1,12 ± 0,04 μg/mL). El mayor porcentaje de protección se observó a las dosis de 800 mg/kg (99,7%) y 400 mg/ kg (73,1%) p<0,01, lo cual fue confirmado por el análisis histopatológico. Conclusiones. El EAVT mostró actividad antioxidante y protectora en el modelo experimental de lesión gástrica inducida por etanol de 70°, de manera dosis dependiente.
