Storage of Morwong (Nemadactylus macropterus Bloch and Schneider) in Combinations of Polyphosphate, Potassium Sorbate and Carbon Dioxide at 4o C

Abstract: Combinations of potassium sorbate and polyphosphate, in conjunction with vacuum or modified atmosphere packaging, were assessed for their preservative effects on morwong fillets (pH 6.75) stored at 4°C. Vacuum packaged and/or frozen fillets were used as comparisons for microbiological and taste panel analysis. A combination of potassium sorbate, polyphosphate and 100% CO2 was the most effective packaging regime. Potassium sorbate on vacuum packaged fish was more effective than a 100% CO2 atmosphere alone. Poly… Show more

“…3). The low acceptability of the fresh fish at the beginning of the experiment was typical of the low scores normally given to steamed fish (Statham et al, 1985). The flavor acceptability of fish from the naturally spoiling and sterile treatments began to fall within the first two days of storage.…”

“…As to the films' permeability, all packing methods enabled a shelf-life of 15 days; low barrier packaging promoted a shorter shelf-life. The use of 50 to 100% CO 2 modified atmosphere has successfully increased the shelf-life of morwong (Nemadactylus macropterus) (Statham et al, 1985). The combination of treatments leads to a synergistic effect.…”

“…The combination of TSP plus sorbate after heat showed no enhanced effect of the combination of additives over their single use (P > 0.05). Synergistic effects already have been obtained by other studies using different chemical combinations including potassium sorbate (Statham et al, 1985;Thakur and Patel, 1994;Drosinos et al, 1997).…”
