However, during the stepwise ethanolic precipitation of sugar beet pectins, Guo and others () found out that the average molecular weight of the precipitation increased with the increase of ethanol concentration at the lower concentration (<70%); further (>70%), the average molecular weight decreased with the increase of ethanol concentration.
