Sprouts as Source of Valuable Nutritients

Abstract: KIEŁKI NASION JAKO ŹRÓDŁO CENNYCH SKŁADNIKÓW ODŻYWCZYCHS t r e s z c z e n i e W pracy omówiono zmiany zachodzące w nasionach podczas kiełkowania i ich powiązanie ze skła-dem chemicznym kiełków. Wykazano, że kiełki są bogatym źródłem podstawowych składników żywno-ści, takich jak: aminokwasy, witaminy, substancje mineralne, nienasycone kwasy tłuszczowe, błonnik pokarmowy.
