Among the methods for assessing swallowing sounds -videofluoroscopy modified barium study, fiberoptic swallowing endoscopy, neck auscultation through a microphone, accelerometer and, more recently, the Doppler sonar -we have chosen the latter. Aim: to analyze swallowing sounds by cervical auscultation using Doppler sonar, in a population between 2 and 15 years without oro-pharyngeal dysfunction. Study design: cross-sectional historical cohort. Materials and methods: we investigated 90 individuals in Curitiba (2006Curitiba ( /2007. The population was separated by age into 3 groups: from 2 to 5 years, from 5 to 10 years of age and from 10 to 15 years of age. We obtained the average values for frequency, intensity and swallowing duration for saliva, liquid and pasty foods). Results: objective and measurable data were obtained. Significance related to gender was found in certain age groups and consistencies, under all the studied variables, except swallowing time. Conclusion: neck auscultation using Doppler sonar is a sensitive method to detect swallowing sounds. There was swallowing interference associated with saliva and the other tested food types and with the biological development of the age range being studied. It is an easy to apply method, not expensive and non-invasive.

RESUMOObjetivo: Investigar a consistência da duração e a reprodutibilidade do padrão dos eventos acústicos relacionados à deglutição de indivíduos sem queixa. Métodos: Oitenta e oito mulheres e 76 homens, entre 6 e 85 anos, com um microfone acoplado ao pescoço e ligado a um computador, realizaram nove deglutições de saliva, e de 5 ml e 10 ml de água. A partir do registro acústico dos sons captados, analisaram-se as durações dos intervalos entre os picos dos dois principais cliques de deglutição (T), da apneia da deglutição (dA), e a relação entre ambos (T/dA). Resultados: Não houve diferenças quanto às durações médias dos tempos entre os picos dos dois cliques da deglutição (T), da apneia da deglutição (dA) e da relação T/dA nas diferentes faixas etárias ou entre os gêneros, com exceção do índice T/dA para as deglutições de 5 ml de água. Conclusão: Os sons da deglutição apresentam um padrão característico e reprodutível, sendo distinguíveis de ruídos externos e de outros sons produzidos na região cervical, podendo, assim, ser utilizados em métodos de avaliação das disfagias.Descritores: Deglutição; Auscultação/instrumentação; Diagnóstico por computador; Apneia; Fatores de tempo; Som/uso diagnóstico INTRODUÇÃO A ausculta cervical consiste em ouvir os sons da deglutição com auxílio de um instrumento de amplificação. Ela auxilia a avaliação da fase faríngea da deglutição por meio da tentativa da determinação da integridade do mecanismo de proteção das vias aéreas e estabelecimento dos tempos desses sons associados à deglutição (1) . A deglutição pode ser didaticamente separada em fases de acordo com as regiões anatômicas envolvidas: fase oral, fase faríngea e fase esofágica. No início da fase faríngea da deglutição ocorre o fechamento do esfíncter velofaríngeo, das pregas vocais, vestibulares e ariepiglóticas, além da elevação e anteriorização da laringe e relaxamento e abertura do esfíncter esofágico superior. Entre esses mecanismos de proteção da via aérea contra a entrada de alimento está a apneia da deglutição, durante a qual ciclos respiratórios são interrompidos após o fechamento das pregas vocais, imediatamente antes do início da fase faríngea. O sincronismo desses eventos é fundamental para o direcionamento do bolo para o esôfago e estômago, e prevenção da entrada do bolo na via aérea (2) . Geralmente são encontrados dois, e algumas vezes três cliques distintos associados com a deglutição: dois cliques audíveis acompanhados de um sopro expiratório que se segue após a apneia da deglutição. No entanto, apesar das diversas tentativas de explicação da geração dos sons da deglutição já realizadas, nenhuma correlação com eventos fisiológicos pôde ser estabelecida com segurança (3)(4)(5) . A maioria das deglutições desempenhadas por adultos saudáveis -97% -é seguida de expiração (6) , podendo, assim, ser considerada um bom marcador para o estudo da fase faríngea da deglutição. Purpose: To analyze published international scientific papers on the physiology of deglutition in oral and pharyngeal phases, considering different food consistencies: nectar, honey, pudding, pasty heterogeneous, semi-solid, and solid. Methods: This is a qualitative literature reviews. The studies considered were selected on PubMed, using the keywords "Swallowing and consistency", "Swallowing and solid", and "Swallowing and pasty", limiting the search to manuscripts published in English in the period between 2005 and 2010, and conducted with human beings over 18 years old. The methodology involved question formulation, location and selection of studies, and critical analyses of the manuscripts, according to the concepts of the Cochrane Handbook. Results: Two hundred and eleven studies were identified, out of which only 18 allowed access to the full text and were directly related to the theme. Conclusion:The studies presented very few similarities between the applied methodologies, especially when considering assessment methods.Overall, the studies were conducted with healthy individuals or with a specific pathology, without presenting the comparison with control cases. The heterogeneity of studies allows the investigation of different swallowing disorders. However, methodological variability makes it difficult to define and generalize the identified swallowing patterns. For this reason, it is not possible to identify parameters on which to base the clinical practice of speech-language therapists, especially when considering the normal or altered physiology of swallowing different food consistencies.
