“…Thịt quả chứa nhiều các chất hoạt tính sinh học như vitamin C (0,35-1,07 mg/g chất khô), β-carotenoid (0,22-0,5 mg/g chất khô) và polyphenol (8,239 mg/g) nên lêkima được biết đến như một loại thực phẩm có các tác dụng: kháng viêm, làm lành vết thương, chống oxy hóa, hạ huyết áp, kháng khuẩn, ngăn ung thư,… (Fuentealba et al, 2016;Hien et al, 2019;Hiển và ctv., 2020;Pertiwi et al, 2020). Đặc biệt, bột lêkima có tỷ lệ carbohydrate lớn (119,4 -344 mg/g chất khô) nên nó là nguồn cung cấp năng lượng và thay thế đường trong chế biến thực phẩm (Durakova et al, 2019, Krasteva et al, 2020. Trên thế giới, lêkima đã được bổ sung vào nhiều sản phẩm thực phẩm như: kem, sữa chua, bánh mì, kẹo, bánh ngọt,… Việt Nam có sản lượng lêkima thời gian gần đây tăng do giá ổn định và khả năng xuất khẩu tăng nhưng sản phẩm chế biến từ loại nguyên liệu này vẫn chưa phổ biến (Lan và ctv., 2019).…”
