Some Factors Affecting Pinto Bean Quality

Abstract: This study was designed to objectively describe the chemical and physical attributes of three pinto cultivars grown at Thrall and El Paso, TX, and Twin Falls, ID. The relationships of these attributes were established through analysis of variance and correlation coefficients. Shear values were found to be the more reliable quality attribute. The expected relationship between rehydration and shear was not found. Maximum imbibition did not yield the most tender product. The amount of water imbibed varied by loca… Show more

“…From a breeding perspective it is important that new cultivars have a 100-seed weight representative of that commercial class. The frequency of hard-shell is higher in the smaller seeds in a seed lot (Quenzer et al 1978). The smaller (1996) seeds may have had a relatively thicker seed coat than the larger (1995) seeds, which would result in a high TEXT mean as was observed in our case.…”

“…The frost-affected sites in both years had a low 100-seed weight, which may also have caused these two navy bean cultivars to have a high texture (42.7 to 59.4 kg force per 100 g processed seed). Quenzer et al (1978) reported that the smallest seeds in a seed lot tend to have hard shells (either the seed coat or the cotyledon is impermeable to water).…”

“…Subsamples of the ground seed were digested on an aluminium block with 4 ml of conc HNO 3 and 2 ml of conc HCLO 4 . Diluted acid digests were analysed for Ca, Fe, K, Mg, Mn and Zn by atomic absorption spectroscopy and for P by an Mo-blue technique.…”
